1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
2/3 cup shredded Swiss cheese
1/2 cup chopped onion
1 can (3.8 ounces) sliced ripe olives, drained
1/4 cup chopped celery
1/4 cup each chopped green, sweet red and orange peppers
1/3 cup balsamic vinaigrette

Steps:

  • In a large bowl, combine the beans, cheese, onion, olives, celery and peppers. Drizzle with vinaigrette; toss to coat. Refrigerate until serving.

1 lb string bean
1/4 onion, sliced thinly
3 tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon pepper
2 tablespoons fresh basil
2 tablespoons fresh oregano

Steps:

  • Boil string beans 4-5 minutes, cooked but still a crisp bite. Steaming a great option as well. Cool under cold water to stop cooking. Place in serving bowl. Mix dressing ingredients then toss with string beans. Best served room temperature. Making ahead will increase the flavors.
