This is a recipe I found on-line at the TOH site. It states that this marinade makes the meat so so juicy and adds a great flavor. Preparation time doesn't include marinading time.

2 tablespoons sesame seeds
6 tablespoons butter
1 medium onion, chopped
4 garlic cloves, minced
1 cup brewed coffee (strong)
1 cup soy sauce
2 tablespoons white vinegar
2 tablespoons Worcestershire sauce
2 lbs boneless beef top sirloin steaks (1 inch thick)

Steps:

  • In a small skillet, toast sesame seeds in butter. Add onion and garlic; saute until tender. In a large bowl, combine the coffee, soy sauce, vinegar, Worcestershire sauce and sesame seed mixture.
  • Pour all into a large resealable plastic bag; add steak. Seal bag and turn to coat; refrigerate for 8 hours or overnight, turning occasionally.
  • Drain and discard marinade from steak. Grill steak, covered, over medium-hot heat for 6-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145°; medium, 160°; well-done, 170°). Enjoy the steak.

This Coffee-Marinated Skirt Steak pairs well with grilled corn or a crunchy salad.

Number Of Ingredients 10

2 garlic cloves, chopped
1 cup strong coffee, room temperature
¼ cup balsamic vinegar
¼ cup Dijon mustard
¼ cup (packed) light brown sugar
2 Tbsp. olive oil
1 tsp. freshly ground black pepper plus more
1 small shallot, chopped
1½ lb. skirt steak, cut into 4 pieces
Kosher salt

Steps:

  • Whisk shallot, garlic, coffee, vinegar, mustard, brown sugar, oil, and 1 tsp. pepper in a medium bowl. Pour half of marinade into a resealable plastic bag. Add steak, seal bag, and turn to coat. Let sit at room temperature 1 hour. Cover remaining marinade and set aside.
  • Prepare grill for medium-high heat. Remove steak from marinade; discard used marinade. Season steak with salt and pepper and grill, turning and basting often with reserved marinade, 8–10 minutes for medium-rare. Let rest 10 minutes before slicing.
  • DO AHEAD: Steak can be marinated 1 day ahead. Chill, turning occasionally. Chill reserved marinade. Bring steak to room temperature before grilling.
