Chia Coconut Pudding with Coconut Milk Recipe | Allrecipes image

Chia seeds make great desserts and are high in omega-3s. This recipe is a healthy alternative to processed desserts. It uses agave (or stevia if you prefer) as a sweetener instead of sugar. Stir again before serving and top with fresh fruit and another dash of cinnamon or spices.

½ cup chia seeds
2 cups coconut milk
6 tablespoons unsweetened coconut milk
1 tablespoon agave nectar, or more to taste
½ teaspoon vanilla extract
¼ teaspoon ground cinnamon
1 pinch salt
½ cup diced fresh strawberries

Steps:

  • Place chia seeds in a bowl.
  • Whisk coconut milk, unsweetened coconut milk, agave nectar, vanilla extract, cinnamon, and salt together in a bowl; pour over chia seeds and stir well. Allow coconut milk-chia seed mixture to soak until thickened, at least 20 minutes, or cover bowl with plastic wrap and refrigerate overnight.
  • Stir pudding and top with strawberries.

Number Of Ingredients 6

1/2 cup gluten-free steel cut oats
1.5 cups almond milk ((or other non-dairy milk))
½ tsp vanilla extract
3 Tbs chia seeds
2 tsp coconut oil ((I like organic virgin coconut oil))
honey to taste

Steps:

  • Add steel cut oats, almond milk, and vanilla to a pan. Bring to a boil, then reduce heat to a simmer, cover and cook until done. Mix every so often. (Cooking time may depend on your brand of steel cut oats, so make sure to read the instructions on your steel cut oats package; mine took 15 mins to cook)
  • Remove the oatmeal from heat and immediately mix in the chia seeds while the oatmeal is still hot. 
  • Then pour the oatmeal into bowls. Add 1 tsp of coconut oil per bowl, and mix. Add in honey to taste and mix.
  • Serves 2.
