Mochi that’s this soft and chewy (the key is coconut milk!) is practically begging to be paired with a delightfully crunchy peanut filling.

1 13.5-oz. can unsweetened coconut milk
1½ cups (225 g) glutinous rice flour
1 cup (200 g) sugar
Cornstarch (for dusting)
1½ cups (180 g) unsalted roasted peanuts
? cup (90 g) creamy peanut butter
3 Tbsp. honey
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
¾ cup unsweetened shredded coconut
A silicone baking mat

Steps:

  • Whisk together coconut milk, rice flour, and sugar in a medium nonstick saucepan. Cook over medium heat, stirring constantly with a heatproof rubber spatula, until a thick, smooth, slightly sticky dough forms, 5–7 minutes (the dough will pull away from sides of pan).
  • Generously dust silicone baking mat with cornstarch. Transfer hot mochi to mat and generously dust top with more cornstarch. Roll out mochi to a 15x12" rectangle. Let cool.
  • Pulse peanuts, peanut butter, honey, and salt in a food processor until mixture resembles very chunky peanut butter. Transfer filling to a small bowl. Place shredded coconut in a shallow bowl.
  • Cut mochi into twenty 3" squares. Using a #60 or #70 cookie scoop (about 1 Tbsp.), divide filling among mochi squares (save any remaining filling for toast or smoothies). Stretch mochi around filling to encase, then pinch together to seal; roll between your palms into smooth balls. Working one at a time, roll balls in coconut (if coconut doesn’t stick, brush or spritz mochi lightly with water, then reroll). Do ahead: Mochi balls can be made 5 days ahead. Store airtight at room temperature.

These traditional Chinese glutinous rice balls have a delicious red bean paste filling and coconut coating. They are super soft and chewy and very easy to make.

Number Of Ingredients 7

1/2 lb glutinous rice flour ((227 grams))
1/2 cup sugar ((100 grams))
1/2 can coconut milk ((200 ml))
3/4 cup water ((180 grams))
2 tbsp wheat starch ((20 grams) can substitute with cornstarch)
1/2 can red bean paste ((255 grams))
desiccated coconut ((unsweetened, about 1 cup/70 grams))

Steps:

  • Whisk all of the ingredients except the red bean paste together until smooth.
  • Pour the batter into a greased container. Steam on high for 25 minutes. Set aside and let cool until lukewarm.
  • Form the red bean paste into 20 balls about the size of a marble. Divide the cooled glutinous rice dough into 20 pieces as well. Note 1
  • Flatten the wrapper slightly and put one red bean paste ball in the center. Wrap the wrapper around the paste, pinch closed, and shape it into a ball.
  • Roll the ball in a tray filled with desiccated coconut to coat. Repeat with the remaining pieces of wrapper and filling. Enjoy fresh or store in an air-tight container for up to 2 days. Store extra mochi in the freezer and thaw for a few hours before eating. Note 2

  • Assemble the mochi: Use plastic gloves if you have them. Line a small baking sheet or a 9-by-13-inch baking dish with parchment paper, dust generously with cornstarch and place in the freezer. Fill a small dish with cool water. Working with one dough round at a time, gently brush off any excess cornstarch and place the round flat in your hand. Working quickly, place a scoop of ice cream into the center of the dough. Gently pull up the edges of the dough to enclose the ice cream, using a small dab of water if the seams aren’t sticking. Gently stretch, twist and pinch the dough together at the seams to secure. Immediately place the mochi seam-side down in the cold pan in the freezer. Repeat with the remaining dough rounds and ice cream balls. Cover the mochi with plastic wrap and freeze until firm, 1 to 2 hours. Let soften for a few minutes before eating.
