I have no clue where I got this recipe but I found it written down in my handwriting. I used to make this when I was in high school and it was always a big hit!

2 1/4 cups all-purpose flour
3/4 teaspoon double-acting baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3/4 cup unsalted butter, soft
1 cup light brown sugar, firmly packed
1/2 cup granulated sugar
1 1/2 teaspoons vanilla
3 large eggs
1 tablespoon lemon zest, freshly grated
1 1/3 cups bananas, ripe and mashed (about 3 large)
3 tablespoons sour cream
3/4 cup macadamia nuts, chopped
1 cup sweetened flaked coconut

Steps:

  • Preheat oven to 350.
  • Sift together flour, baking powder, baking soda, and salt into a bowl.
  • In a large bowl, with an electric mixer, cream the butter with the sugars.
  • Beat in vanilla, eggs (1 at a time), zest, banana, and sour cream.
  • Add flour mixture slowly and beat until it is just combined.
  • Stir in the macadamia nuts and coconut.
  • Pour batter into a greased (I use butter and a little flour) 9x5x3 inch loaf pan.
  • Bake in center of preheated 350 degree oven for 40-50 minute or until tester comes out clean.

This is such an easy recipe to make. I use my food processor to mix with the dough blade.

½ cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
½ cup sour cream
2?½ cups all-purpose flour
½ teaspoon baking soda
2 cups flaked coconut
1?½ cups chopped macadamia nuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and sour cream. Combine the flour and baking soda; stir into the creamed mixture until well blended. Use a wooden spoon to stir in the coconut and macadamia nuts. Drop dough by rounded teaspoons 2 inches apart onto ungreased cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, until edges are golden brown. remove cookies from baking sheets to cool on wire racks.
