Coconut Chicken Cutlets

Number Of Ingredients 16

8 chicken cutlets
slightly pounded
Salt and pepper
1 cup flour
2 eggs
1 cup panko breadcrumbs
1 cup grated unsweetened coconut
1 to 2 tablespoons EVOO Extra Virgin Olive Oil
eyeball it
1/2 cup pineapple preserves
1/2 jalapeño
seeded and sliced into rings
1 tablespoon rice wine vinegar or tamari
1 to 2 tablespoons chicken stock
2 scallions
whites and greens sliced

Steps:

  • Preheat oven to 250F
  • Place a cooling rack over a baking sheet and place in oven
  • Arrange 3 shallow dishes: Place about a cup of flour on first plate to dredge the chicken
  • Beat eggs with a splash of water in second dish
  • Combine the panko and coconut in the third dish
  • Heat a thin layer of EVOO in a large skillet over medium heat
  • Season chicken with salt and pepper, then coat them in flour, then egg, then breadcrumb-coconut mixture
  • Fry in 2 batches until deep golden in color, 3-4 minutes on each side
  • Keep chicken crisp in warm oven and repeat with remaining chicken
  • In a small skillet over medium-high heat, stir together pineapple preserves, jalapeño slices, rice wine vinegar or tamari, and chicken stock
  • Reduce until thickened, about 2 minutes
  • Stir in scallions
  • To serve, arrange chicken on a platter and pour sauce over the top

2 tablespoons grapeseed oil, divided
1 pound chicken cutlets
1 (14 ounce) can light coconut milk
1 tablespoon brown sugar
1 tablespoon red Thai curry paste (see Tip)
1 tablespoon lime juice
2 cups cooked quinoa
Chopped fresh cilantro for garnish

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Add chicken, in batches if necessary, and cook, flipping once, until browned and cooked through, 1 to 3 minutes per side. Transfer to a plate.
  • Remove pan from heat. Whisk the remaining 1 tablespoon oil, coconut milk, brown sugar, curry paste and lime juice in the pan. Cook over high heat, stirring occasionally, until reduced by half, 5 to 10 minutes. Serve the chicken with quinoa and the sauce, garnished with cilantro, if desired.

  • " Allow two dishes. Beat the egg with a splash of water in first dish. Combine the panko breadcrumbs and coconut in the 2nd dish. Heat a thin layer of extra virgin olive oil (eyeball it) in a large skillet over medium heat. Season the chicken cutlets with salt and pepper, then the egg and lastly, the breadcrumb-coconut mixture. Fry the cutlets in two batches until deep golden in color, 3-4 minutes on each side. Keep the chicken crisp in the warm oven and repeat with the remaining chicken. In a small skillet over medium-low heat, stir together the pineapple preserves, rice wine vinegar, soy sauce and chicken stock. Reduce until thickened, about 2 minutes. Stir in the scallions.To serve, arrange the chicken on plates, top with sauce or serve the sauce on the side. Close your eyes, take a deep breath of the wonderful fragrances and dream you're in Hawaii, then eat and enjoy! I served this with Basmati rice (90 seconds in the microwave by Uncle Ben) flavored with a half palm of chopped cilantro or parsley and a dash of lime juice and salt and pepper to taste. I also served a salad with fresh greens, 1/2 cubed avocado, 1/2 cubed tomato and topped with vinaigrette. I used Good Season's vinaigrette dressing. "
