No-Bake Coconut Balls Recipe | MyRecipes image

Make a batch of coconut balls and give them as gifts. As the title says, there is no baking involved and with less than 7 ingredients, it couldn't be any easier to make these treats.

Yield Makes 3 1/2 dozen

Number Of Ingredients 7

? cup butter
3 tablespoons water
1 teaspoon vanilla extract
2 cups sifted powdered sugar
½ cup instant nonfat dry milk powder
3 cups sweetened flaked coconut
1 cup (6 ounces) semisweet chocolate morsels

Steps:

  • Melt 1/3 cup butter in a medium saucepan over low heat. Remove from heat, and stir in 3 tablespoons water and vanilla.
  • Combine powdered sugar and milk powder; stir 1/2 cup at a time into butter mixture until smooth. Stir in coconut.
  • Shape into 1-inch balls, and place on ungreased baking sheets. Chill 20 minutes.
  • Place chocolate morsels in a small zip-top freezer bag; seal. Submerge in hot water until chocolate melts. Snip a tiny hole in one corner of bag, and drizzle chocolate over coconut balls. Store in refrigerator.

½ cup shredded coconut, divided
1 cup almond butter
¼ cup finely chopped almonds
¼ cup coconut oil
2 tablespoons honey
1 teaspoon vanilla extract

Steps:

  • Place 1/4 cup shredded coconut in a shallow bowl. Line a large plate with parchment paper.
  • Combine almond butter, 1/4 cup of the shredded coconut, almonds, coconut oil, and honey in a bowl; mix until a firm paste forms. Form almond butter mixture into balls, roll in shredded coconut, and place on the lined plate. Chill until firm, 2 to 3 hours.
