If you've had mochi before, this is not like the mochi you normally eat at New Years; it has a rich, slightly sweet, chocolate flavor. The mochiko powder can probably be found in the oriental section of your grocery store. A secretary in my office made this recipe; she got the recipe from one of those recipe cards you can get at the grocers. For the cocoa, the recipe says you can use Nestles ... I use Ghiradelli,

Steps:
- Pre-heat oven to 350 degrees.
- In a large mixing bowl, sift together dry ingredients.
- In a separate bowl , combine wet ingredients.
- Add the dry mixture to the wet mixture in small amounts.
- Mix until until all ingredients are well combined.
- Pour mixture in a 9" x 13" buttered pan- will also fit in two 8"x8" pans.
- Bake for 1 hr.
- Test with toothpick - comes out clean when done.
- Let cool before cutting.
- Yield may differ according to the size of the pieces-- suggest cutting in squares or 1"x2" rectangles -- it is rich.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Sift mochiko, sugar, cocoa powder, and baking soda together in a bowl.
- Place butter in a microwave-safe bowl. Heat in the microwave until melted, about 1 minute. Stir in chocolate chips until smooth and creamy.
- Beat coconut milk, evaporated milk, and eggs together in a bowl. Add vanilla extract. Add chocolate-butter mixture and stir until incorporated. Add to the flour mixture slowly, whisking by hand until well incorporated and no lumps remain. Pour into the prepared pan.
- Bake in the preheated oven until set, about 55 minutes.
- Cool completely before cutting, about 1 hour. Cut with a plastic knife; mochi sticks to metal.

- Cut mochi into twenty 3" squares. Using a #60 or #70 cookie scoop (about 1 Tbsp.), divide filling among mochi squares (save any remaining filling for toast or smoothies). Stretch mochi around filling to encase, then pinch together to seal; roll between your palms into smooth balls. Working one at a time, roll balls in coconut (if coconut doesn’t stick, brush or spritz mochi lightly with water, then reroll). Do ahead: Mochi balls can be made 5 days ahead. Store airtight at room temperature.
