COCKTAIL MEATBALLS - ALLRECIPES

These tasty meatballs will disappear quickly from anyone's holiday party. My mom makes them every year for New Years Eve, and now so do I. These do very well in a slow cooker, as you can simmer them before serving, as well as keep them hot for the duration of your party.

Number Of Ingredients 9

1 pound lean ground beef
1 egg
2 tablespoons water
½ cup bread crumbs
3 tablespoons minced onion
1 (8 ounce) can jellied cranberry sauce
¾ cup chili sauce
1 tablespoon brown sugar
1 ½ teaspoons lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together the ground beef, egg, water, bread crumbs, and minced onion. Roll into small meatballs.
  • Bake in preheated oven for 20 to 25 minutes, turning once.
  • In a slow cooker or large saucepan over low heat, blend the cranberry sauce, chili sauce, brown sugar, and lemon juice. Add meatballs, and simmer for 1 hour before serving.

This cocktail's origin has nothing to do with Moscow or mules, but after a few sips of this vodka, ginger beer, and lime concoction, no one will care.

Number Of Ingredients 5

1 ½ fluid ounces vodka
½ fluid ounce lime juice
ice cubes
½ cup ginger beer
1 lime wedge for garnish

Steps:

  • Pour vodka and lime juice into a mug; add ice cubes and ginger beer. Stir to combine.
  • Drop a lime wedge into the mug for garnish.

    1. If your meat is not already minced, whiz it up in a food processor to the required consistency and place it in a bowl.
    2. Use the food processor to turn the bread into breadcrumbs, then add to the meat.
    3. Bash up the cumin seeds and dried chilli in a pestle and mortar, and pick and finely chop the rosemary leaves. Add to the mince with the dried oregano and egg yolk. Season well with sea salt and black pepper.
    4. At this stage you could add your optional ingredients (peeling and finely chopping the onion and garlic first, then cooked together gently in 1 tablespoon of oil until tender and allowed to cool).
    5. Mix well, and, with wet hands, roll and pat into meatballs the size and shape you want (cook straight away or put on greaseproof paper and refrigerated for up to a day.)
    6. Preheat the oven to 200°C/400°F/gas 6 and heat a thick-bottomed casserole pan on the hob.
    7. Swirl 4 tablespoons of oil around the pan and add your meatballs. Fry until brown all over, being careful not to break them up.
    8. Turn the heat down and cover with the Basic tomato sauce, pick the basil leaves and tear in fresh basil, tear over the mozzarella and finely grate over the Parmesan.
    9. Cook in the oven for about 15 to 20 minutes, or until the cheese is golden.
