- Preheat the oven to 350 degrees F.
- Arrange the crackers in a single layer on a rimmed baking sheet so that the baking sheet is completely covered with a solid layer of crackers. Set aside.
- In a medium saucepan, melt the butter with the brown sugar and vanilla. Bring to a gentle boil over medium heat and boil until it starts to thicken, 1 to 2 minutes. Immediately pour the mixture over the crackers in an even layer. Use an offset spatula to spread the mixture all over the crackers. Bake for 5 minutes. Sprinkle the almonds all over, then let cool completely.
- When cool, break apart for a great snack.

- Beat together flour, fine sea salt, and pepper with an electric mixer on low speed until blended. With mixer running, beat in butter, a few pieces at a time, until mixture is crumbly. Beat in buttermilk just until dough comes together. Divide dough in half and shape into rectangles. Wrap with plastic and chill at least 1 hour. (Dough can be frozen, well wrapped, up to 3 months.) Preheat oven to 350°F with racks in middle and lower thirds. Line two baking sheets with parchment paper. On a lightly floured work surface, with one dough disk at a time, roll into a very thin rectangle, about 1/16-inch thick. With a sharp knife or a pizza wheel, cut dough into 2-inch triangles. Arrange on prepared baking sheets. Prick with a fork and sprinkle with flaky sea salt. Repeat with remaining dough, rerolling scraps. Bake, in batches, rotating pans halfway through, until puffed and lightly golden, 10 to 12 minutes. Transfer to wire racks to cool. Store in an airtight container up to 1 week.

- Lay the crackers face up on a large rack over a baking sheet (or broiler pan). Scoop about 1 teaspoon of the grated Parmesan onto each cracker. Cut the package of bacon in half (or cut pieces individually) and carefully, so the cheese doesn't fall off, wrap each cheese covered cracker with one half piece of bacon, completely covering the cracker. It should fit snugly around the cracker, but not be pulled too taut. Place the bacon-wrapped crackers onto the rack. Place the baking sheet in the oven for about 2 hours. Serve immediately or at room temperature!
