DUTCH OVEN CRUSTY BREAD | JUST A PINCH RECIPES

Dutch Oven Crusty Bread | Just A Pinch Recipes image

The next time you want warm crusty bread, give this recipe a try. The outside is crisp while the inside stays firm and moist. To get the true crust effect, start the dough the night before. The aroma of the fresh bread baking in the Dutch oven will make the house smell wonderful. When you open the Dutch oven, there's the perfect loaf of bread. This is a very easy bread recipe that can be customized with your favorite herbs too.

Prep Time 10 minutes

Cook Time 45 minutes

Yield 12

Number Of Ingredients 4

3 cup(s) bread flour
1 teaspoon(s) active dry yeast
1 1/2 teaspoon(s) salt
1 1/2 cup(s) water, warm

Steps:

  • Whisk flour, yeast, and salt in a 3-4 quart bowl with a tight-fitting lid. I like to use my trusty Tupperware. If you don't have a bowl w/lid use plastic wrap on a bowl.
  • Add the water and stir with a wooden spoon until the dough is mixed well.
  • The dough will be quite sticky and shaggy looking, but that's OK.
  • Cover the bowl and set aside for 12-18 hours (up to 24 overnight is fine).
  • Preheat oven to 450 degrees. Place a cast-iron Dutch oven with the lid into the oven while preheating and heat the pot/lid for 30 minutes.
  • Meanwhile, scrape the risen dough from the bowl onto a heavily floured surface. (Dough will still be very sticky.)
  • With floured hands, gently shape the dough into a round loaf, making sure there's enough flour on the surface so the dough doesn't stick. Let the dough just sit there until your pot is preheated.
  • Take the hot pot from the oven and gently place the dough into the pot.
  • Cover with the lid and return to the oven and bake for 30 minutes.
  • Remove the lid at that time and return the pot to the oven for another 10-15 minutes.
  • Gently shake the loaf onto a cooling rack and enjoy the beautiful aroma. Give it a chance to cool before cutting into the loaf.

KROKETTEN (DUTCH CROQUETTES) | JUST A PINCH RECIPES

Kroketten (Dutch Croquettes) | Just A Pinch Recipes image

Croquettes are a fantastic way to use leftovers. For testing we used turkey, but ham, chicken, or roast beef could easily be substituted. A great recipe to have on hand to use extra meat and vegetables from a holiday meal. After frying, the bread crumb outside is crunchy and the savory filling is soft and full of flavor. We tried them dipped in mustard and on a roll with mustard. Both ways are delicious!

Prep Time 20 minutes

Cook Time 5 minutes

Number Of Ingredients 16

1/4 cup(s) butter
6 tablespoon(s) all-purpose flour
1 cup(s) hot milk
2 1/4 cup(s) cold leftover meat (roast, pork, chicken, turkey)
1/2 medium onion
1/4 cup(s) *optional leftover vegetables (corn for the non Dutch tastes because most Dutch consider corn chicken feed and they do not eat it; peas, carrot) (adjust meat to 2 cups if you add vegetables)
1 tablespoon(s) Ketjap Manis (sweet soy sauce) see picture below
1 tablespoon(s) thyme
1 tablespoon(s) parsley
- salt and pepper, to taste
CRUMB COATING:
2 - eggs (slightly beaten with milk)
1/3 cup(s) milk (add to egg mixture)
1 cup(s) all-purpose flour
2 cup(s) plain bread crumbs
1 teaspoon(s) each salt and pepper

Steps:

  • Heat milk in the microwave.
  • In a small saucepan, melt butter.
  • Stir in flour to make a paste cook for 3 minutes while continually stirring.
  • Then gradually mix in hot milk.
  • Bring to a boil, lower the heat and simmer for 5 minutes.
  • Add salt and pepper to taste.
  • Then pour into a bowl to cool.
  • Place all remaining filling ingredients into a food processor and pulse until smooth.
  • Add to bowl with cool sauce. Stir well to make a thick paste. Taste and season with salt and pepper if needed.
  • Prepare coating stations - flour, egg beaten with the milk and bread crumbs into dipping plates.
  • Form paste into small logs (like large sausages).
  • Then coat with crumb topping. Roll your logs into flour.
  • Then dip in egg/milk mixture.
  • Then coat with bread crumbs (make sure to thoroughly cover with each of these three steps).
  • Preheat oven to 200 degrees and heat oil to about 350 degrees. Cook for 5 to 10 minutes turning halfway through frying.
  • Place fried croquettes on a baking sheet. Keep warm in the 200 degree oven until ready to serve.
  • You can eat these just as they are or if you want to try it in the Dutch style slice them lengthwise top with mustard (Dijon or brown) and place on a slice of white bread.
  • You know you've done well if the filling is separated from the coating after frying.

DUTCH OVEN CLASSIC BEEF STEW RECIPE | FOOD & WINE
There’s nothing better than coming home to a simmering pot of this hearty stew on a cool fall or winter day. Hearty chunks of beef turn tender after a low and slow trip in your favorite Dutch oven; potatoes join the party during the tail end of cooking to retain their texture. Cut potatoes into similar-size pieces to guarantee they cook evenly.
