Country Club Prime Rib Recipe | Allrecipes image

Here is how we used to do prime rib at a country club where I cooked 20 at a time every Saturday afternoon.

5 pounds prime rib roast
1 cup kosher salt
2 teaspoons garlic powder
1 tablespoon coarsely ground black pepper

Steps:

  • Trim the prime rib roast of excess fat and any connective tissue. Lightly score the entire roast in a criss-cross pattern (about 1/8 inch deep).
  • Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the kosher salt, garlic powder, and black pepper. Rub the mixture into the roast until it develops a crust. Really pack it on.
  • Place the roast into a roasting pan, and pour water into the bottom of the pan to 1/2 inch deep. Cover the roast with a lid or aluminum foil.
  • Roast in the oven for about 1 1/2 to 2 hours, then check the internal temperature using a meat thermometer. The internal temperature should be at least 145 degrees F (63 degrees C). Hold the roast in an oven at 200 degrees F (110 degrees C) until ready to carve. Let stand for a few minutes before carving if not holding. Put on your silly white hat, set up the buffet carving station, and watch the hungry people line up!

Oven Parboiled Baby Back Ribs | Just A Pinch Recipes image

This is the BEST way to par boil ribs ever! So tender, all you need is a fork.

1 - slab of baby back ribs
1 bottle(s) sweet baby rays honey bbq sauce
1 bottle(s) sweet baby rays honey chipotle bbq sauce
3 pinch(es) chili powder (to taste)
15 clove(s) garlic
1 - sweet vadilia onion - chopped in quarters
- a lot of salt and pepper to taste

Steps:

  • Remove the silver lining off the back of the baby back ribs. I find it easiest to make a long incision down the middle and remove it in two parts. Cut the ribs into 4 sections (about 3 - 4 ribs per portion)
  • Put the ribs in a large stock pot and cover with water. Combine the Garlic cloves, onion, salt, pepper and any other seasoning you like to use (I like Cavenders). Bring to a rolling boil, cover and simmer for an hour. Preheat your oven to 250
  • Take 2 large pieces of aluminum foil and put two sections of ribs in each. Slather the ribs with equal parts of the two Sweet Baby Ray's sauces. NOTE - you don't have to use both, I just like mine sweet and spicy! Sprinkle a little chili powder on top and tightly seal the aluminum packets.
  • Cook for 2 hours at 250 degrees. Remove and put your oven on broil. Open up the aluminum packets but do not remove the ribs. They will now go in the broiler to give the tops a nice crispy finish. Eye it, it can take anywhere from 2-5 minutes depending on how you like them.

The Twinkie was invented in 1930 by the late James A. Dewar, then the Chicago-area regional manager of Continental Baking Company, the parent corporation behind the Hostess trademark.
