Here's what HG had to say: cloud eggs are super-fluffy pillows of egg whites baked with the yolks nestled on top. They're beautiful, delicious, and a fun change of pace if you're used to scrambles and hard-boiled eggs. We first tried baking them on a baking sheet but found the results fell flat. So we broke out a jumbo muffin pan, and the outcome was spectacular! Here's HG's super-easy, super-awesome recipe...

2 large eggs
1 dash each salt and black pepper
everything bagel seasoning blend additional salt and black pepper (like the kind by Trader Joe's)

Steps:

  • Preheat oven to 450 degrees.
  • Spray 2 cups of a jumbo muffin pan (like this one) with nonstick spray. (If you don't have a jumbo muffin pan, use two small oven-safe bowls.).
  • Separate egg whites into a large bowl, and gently place yolks in a small bowl without breaking them.
  • With an electric mixer set to high speed, beat egg whites until fluffy and slightly stiff, about 4 minutes.
  • Divide egg whites between the two sprayed cups of the muffin pan.
  • Using the back of a spoon, create a small indentation in the center of each egg white. Gently place a yolk in each indentation.
  • Season with salt and pepper. Bake to your preference, 5 - 7 minutes (5 minutes for runnier yolks; 7 minutes for firmer ones).

Steps:

  • Preheat the oven to 450°F (230°C).
  • Separate the egg yolks from the egg whites. Save the yolks for later.
  • Using an electric hand whisk, whisk on a high speed until soft peaks form.
  • Fold in salt and pepper.
  • Spoon the egg whites onto a baking tray and make a well in the middle, for the yolks to go in later. Bake for 8-10 minutes.
  • Drop the yolks into the whites and bake for a further 3 minutes.
  • Serve on toast or with sides of your choice.
  • Enjoy!
