BEETROOT SOUP | SAINSBURY'S RECIPES
A warming, vibrantly coloured soup with a fiery kick of horseradish

Steps:
Heat the oil in a large pan, then add the onion and garlic and fry gently until the onion is translucent. Add the chopped beetroot and juices along with the stock and simmer for 5-7 minutes.
Take the pan off the heat and let cool slightly, then use a hand-held blender to whizz to a purée until smooth. Return to the heat to warm through
Combine the soured cream and horseradish sauce in a small bowl. Ladle the soup into 4 bowls, swirl in a spoonful of the sauce, garnish with dill and serve.

EASY SALMON STEW - JUST A PINCH RECIPES
In a hurry and want something everyone will love? It is great alone or with crackers or a sandwich but my family members just grab the soup mugs and fill 'em up and go, even in the summer time.. I have listed 1 or 2 in the ingredients so that if you only want enough to feed 4 or 5 people you can use 1 of each item or 2 if you are serving more.

Steps:
- In a small stew pot or dutch oven, melt your butter over medium low heat.
- While your butter is melting, quarter the medium onion and chop it in a mini chopper so that it is chopped fine but not mushy.
- Add the chopped onion to the butter and saute on med. heat until clear and soft.
- Stir in the deboned and skinned salmon, mix well.
- Slowly pour the milk in and the reserved broth if you want more of the salmon flavor, & reduce your heat to low so as not to scald it. Stir every few minutes until it is steaming and the stew is heated well.
- Add salt and pepper to taste and serve while steaming hot.
