1 1/2 cups chopped peeled apples
1 can (12.4 oz) refrigerated Pillsbury™ Cinnamon Rolls with Original Icing (8 Count)
1/2 cup pecan halves or pieces
2 tablespoons margarine or butter, melted
1/3 cup firmly packed brown sugar
2 tablespoons corn syrup

Steps:

  • Heat oven to 350°F. Spray 9-inch glass pie pan with nonstick cooking spray. Spread 1 cup of the apples in sprayed pan.
  • Separate dough into 8 rolls. Cut each roll into quarters; place in large bowl. Add remaining 1/2 cup apples and pecans.
  • In small bowl, combine margarine, brown sugar and corn syrup; mix well. Add brown sugar mixture to dough mixture; toss gently to combine. Spoon mixture over apples in pan.
  • Bake at 350°F. for 28 to 38 minutes or until deep golden brown. Cool 5 minutes. Invert onto serving platter.
  • Remove lid from icing. Microwave icing on HIGH for 10 to 15 seconds or until of drizzling consistency. Drizzle over warm coffee cake. Serve warm.

1/3 cup baking mix
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons firm butter or margarine
2 cups baking mix
2/3 cup milk or water
2 tablespoons granulated sugar
1 egg

Steps:

  • Heat oven to 375°F. Grease bottom and side of 9-inch round pan with shortening or cooking spray. In small bowl, mix 1/3 cup baking mix, the brown sugar and cinnamon. Cut in butter, using fork or pastry blender, until mixture is crumbly; set aside.
  • In medium bowl, stir all coffee cake ingredients until blended. Spread in pan. Sprinkle with topping.
  • Bake 18 to 22 minutes or until golden brown. Serve warm or cool.

  • Make cake: Preheat oven to 350° and grease a bundt pan with butter then sprinkle and coat evenly with a thin layer of flour. Prepare cake mix according to package instructions, then stir in cinnamon. Pour ⅓ of the batter into prepared pan. Sprinkle on an even a layer of cinnamon-sugar. Pour another ⅓ of the batter then top with another layer of cinnamon-sugar. Pour ⅓ remaining batter on top, then very gently, drag a butter knife through the batter to create swirls. Bake until a toothpick inserted into the center of the cake comes out clean, about 30 minutes.  Let cool for 10 minutes in pan then invert onto a cooling rack to cool completely. Meanwhile, make glaze: In a large liquid measuring cup (or a medium bowl), whisk together cream cheese, powdered sugar, milk, and salt. Drizzle over cooled cake. Let set for 10 minutes before slicing.
