4 cups all-purpose flour
2 cups sugar, divided
2 teaspoons baking soda
1 teaspoon salt
2 large eggs, room temperature
2 cups buttermilk
1/2 cup canola oil
1/2 cup raisins
3 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour, 1-1/2 cups sugar, soda and salt. In a small bowl, whisk eggs, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in raisins. Combine cinnamon and remaining sugar; set aside. , Spoon half the batter into 2 greased 8x4-in. loaf pans. Sprinkle with half of the reserved cinnamon sugar; repeat layers. Cut through batter with a knife to swirl. , Bake 55-60 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks.
    Freeze option: Wrap cooled bread in foil and freeze for up to 3 months. To use, thaw at room temperature.

1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup sugar
1-1/2 teaspoons ground cinnamon, divided
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon ground nutmeg
2 large eggs, room temperature
1-1/4 cups unsweetened applesauce
1/4 cup canola oil
3 tablespoons 2% milk
1/4 cup packed brown sugar

Steps:

  • Preheat oven to 350°. In a large bowl, combine the flours, sugar, 1 teaspoon cinnamon, baking soda, salt, baking powder and nutmeg. In a small bowl, whisk the eggs, applesauce, oil and milk. Stir into dry ingredients just until moistened. , Transfer to a greased 9x5-in. loaf pan. Combine brown sugar and remaining 1/2 teaspoon cinnamon; sprinkle over the top. , Bake until a toothpick inserted in the center comes out clean, 50-60 minutes. Cool for 10 minutes before removing from pan to a wire rack.
