Beef Chuck Eye Roast with Paprika Herb Rub Recipe image

This simple, flavorful beef roast — rubbed with thyme, paprika, and cumin — is made with chuck eye, a cut from the chuck portion of the rib-eye muscle.

1 tbsp. ground bay leaves
1 tbsp. Freshly ground pepper
1 tbsp. chopped thyme leaves
2 tsp. sweet paprika
1/2 tsp. ground cumin
1 chuck eye roast
extra-virgin olive oil
salt
4 clove garlic
3 tbsp. vegetable oil

Steps:

  • Preheat the oven to 375 degrees F. In a bowl, mix the bay leaves, pepper, thyme, paprika, and cumin. Drizzle the roast generously with olive oil and season with salt. Rub the garlic and spice mixture over the roast and let stand for 10 minutes. Using butcher's twine, tie the roast to give it a uniform shape. In an ovenproof skillet, heat the vegetable oil. Add the roast and cook over moderate heat until lightly browned all over, 12 minutes. Transfer the skillet to the upper third of the oven and roast the meat for 1 hour, until an instant-read thermometer inserted in the center registers 130 degrees F. Transfer the roast to a carving board and let rest for 10 minutes. Discard the twine. Using a thin, sharp knife, thinly slice the beef across the grain and serve.

2 lbs chuck roast
2 tablespoons vegetable oil
3 potatoes, sliced
2 carrots, chopped
2 celery ribs, chopped
2 onions, sliced
2 tablespoons ketchup
2 tablespoons Worcestershire sauce
1 (10 ounce) cream of mushroom soup
3/4 cup water
1/2 teaspoon salt

Steps:

  • Cut vegetables and place in crock in the following order: carrots, celery, onion and potatoes. Sprinkle with salt.
  • Brown roast in vegetable oil and place on top of vegetables in crock pot. (More salt may be sprinkled on roast.).
  • In a small bowl mix cream of mushroom soup, ketchup, worcestershire sauce and water. Pour over roast.
  • Cover with crock pot lid and cook 1 hour on high and 4 hours on low. Serve over rice.
