1 tablespoon vegetable oil
2 scallions, trimmed, and cut crosswise into 1/2-inch thick pieces
1 1/2 cups sliced napa cabbage
1/4 cup sliced celery
1/4 cup bean sprouts
1/4 teaspoon granulated sugar
1/2 cup chicken broth
1/2 tablespoon soy sauce
1 teaspoon oriental sesame oil
1/2 tablespoon cornstarch, dissolved in
1 tablespoon cold water
red pepper flakes, to taste
1/4 lb vermicelli, cooked

Steps:

  • In a large heavy skillet heat the vegetable oil until it is hot but not smoking and in it stir-fry the scallions, cabbage, celery and bean sprouts for 3 minutes, or until the cabbage is wilted.
  • Add the sugar, broth, soy sauce, and sesame oil and simmer the mixture, covered, for 3 minutes.
  • Stir the cornstarch mixture, stir it into the vegetable mixture, and bring the liquid to a boil.
  • Season to taste with red pepper flakes. Simmer until heated through and serve over noodles.

3 tablespoons canola oil
1 tablespoon sesame oil
½ medium-size white onion, finely chopped
2 celery stalks, sliced
1 tablespoon chopped fresh ginger
3 cups shredded coleslaw mix
5 ounces bean sprouts
1 (7.1-oz.) pkg. pre-cooked stir-fry noodles
¼ cup tamari
2 tablespoons mirin or white wine

Steps:

  • Heat oil in a wok over high. Add onion, celery, and ginger; cook, stirring often, 1 minute. Add coleslaw mix and sprouts; cook, stirring constantly, 2 minutes. Add noodles, and cook, stirring constantly, 1 minute. Add tamari and mirin; cook, stirring occasionally, 2 minutes.

Add cabbage, celery, and onions, stir frying while mixing frequently until slightly softened and wilted, about 3 minutes. Add garlic and ginger and cook until just fragrant, about 30 seconds. Add noodles and, using tongs, toss to combine. Give the sauce a quick whisk and add to wok. Toss to combine and coat the noodles with sauce, being careful not to break the noodles into small pieces.
