Crunchy Celery Salad with Lemon-Olive Oil Dressing image

This salad works best with the large, crunchy outer celery stalks. Save the inner, tender stalks for another use.

1 tbsp. lemon zest, plus 3 tbsp. lemon juice
2 tsp. Dijon mustard
1/2 c. olive oil
Kosher salt
black pepper
20 stalks celery, thinly sliced, plus 1/2 c. celery leaves for garnish
1 tbsp. chopped fresh flat-leaf parsley leaves (from 1 small bunch)
1/4 c. shaved Parmigiano Reggiano

Steps:

  • Whisk together lemon zest and juice and mustard in bowl. Add oil in a steady stream, whisk constantly, until creamy and emulsified. Season with salt and pepper. Add celery, chopped and whole parsley leaves, and shaved Parmesan; toss to combine. garnish with celery leaves.

Steps:

  • Prepare ingredients: 15g carrots, 15g celery, 4 shrimps, 15g baby porridge rice.

  • Rub the carrots into filaments.

  • Cut the blanched celery into fine pieces.
