Candied Fruit Bread Recipe | Allrecipes image

This is a great bread for tea at Christmas time when you don't like to make fruitcake. It is an old recipe that belonged to my mother, and really good.

Yield 1 - 8 x 3 inch loaf

Number Of Ingredients 14

2 eggs
1 cup milk
3 tablespoons butter, melted
2 cups sifted all-purpose flour
4 teaspoons baking powder
½ teaspoon salt
¼ teaspoon ground cinnamon
¾ cup white sugar
¼ cup chopped candied citron
¼ cup currants
2 tablespoons chopped candied cherries
2 tablespoons chopped candied lemon peel
¼ cup chopped blanched almonds
¼ cup chopped pecans

Steps:

  • Grease an 8x5-inch loaf tin thoroughly. Preheat oven to 375 degrees F (190 degrees C).
  • Beat eggs in a medium bowl. Add milk and melted butter; mix well.
  • Sift together flour, baking powder, salt, and cinnamon into a large mixing bowl. Add sugar, prepared fruits and nuts, and mix well. Add egg mixture to fruit and nut mixture, stirring just enough to blend. Pour batter into the greased loaf tin. Let stand for 20 minutes.
  • Place pan in center of oven on middle rack. Bake for 60 to 70 minutes. Turn out on wire rack, and allow to cool for several hours before slicing.

Number Of Ingredients 15

3/4 cup honey
1/3 cup plus 1 tablespoon granulated sugar
1/4 teaspoon kosher salt
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 large egg, lightly beaten
2/3 cup blanched almonds, finely chopped
1/2 cup finely chopped candied orange peel
1/4 cup finely chopped candied citron peel
1 tablespoon finely grated orange zest
1 1/2 teaspoons finely grated lemon zest
1 1/2 teaspoons ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon freshly grated nutmeg
1/4 cup confectioners’ sugar

Steps:

  • In a small saucepan, combine the honey with the granulated sugar and salt. Cook over moderate heat, stirring occasionally, until the honey and sugar are melted and beginning to simmer, about 3 minutes. Transfer to a large heatproof bowl and let cool slightly, about 20 minutes.
  • Preheat the oven to 350° and line a large rimmed baking sheet with parchment paper. In a small bowl, sift the flour with the baking powder. Using a sturdy spatula or wooden spoon, stir the egg into the honey mixture. Stir in the almonds, candied orange and citron peels, orange and lemon zests, cinnamon, cloves and nutmeg, then stir in the sifted flour.
  • Scrape the dough onto the prepared baking sheet and, with floured hands, press into a 12-by-9-inch rectangle, about ¼ inch thick. Bake for about 20 minutes, rotating the baking sheet halfway through, until golden and puffy.
  • Meanwhile, in a small saucepan, combine the confectioners’ sugar with 2 tablespoons of water and bring to a boil over moderately high heat. Boil the syrup until it begins to thicken, about 5 minutes. Keep warm.
  • As soon as the leckerli is done, brush the surface with the hot glaze. While it’s still hot, carefully slide the parchment onto a work surface. Using a sharp knife, trim the edges of the rectangle and cut the leckerli into 2-by-1-inch bars. Let cool before serving.

  • Preheat oven to 300°. Grease and flour three 9x5-in. loaf pans. Line bottoms with waxed paper; grease and flour the paper. Combine currants, raisins, walnuts, candied citron and 1/4 cup flour. Toss to coat; set aside., Cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in molasses. In another bowl, whisk baking soda, cinnamon, nutmeg, cloves and remaining flour; add to creamed mixture alternately with coffee. Stir into currant mixture and mix well., Transfer to prepared pans. Bake until a toothpick inserted in the center comes out clean, 1-1/4 to 1-1/2 hours. Cool in pans 10 minutes before removing to wire racks to cool completely. Wrap tightly and store in the refrigerator for at least 2 days to blend flavors. Slice and bring to room temperature before serving. Refrigerate leftovers.
