red wine 

8 oz.

dark chocolate, finely chopped

1/2 c.

heavy cream

Cocoa powder, for coating

Shredded coconut, for coating

Finely chopped pistachios, for coating 

Steps:

  • In a small saucepan, bring red wine to a boil and cook until reduced to ¼ cup, about 5 minutes.  Place chocolate in a medium heat-proof bowl. In another small saucepan, bring the heavy cream to a simmer. Pour heavy cream mixture over chocolate and let sit 5 minutes. Whisk until smooth. Add the reduced wine and whisk until smooth. Refrigerate until firm, about 1 hour.   Line a large baking sheet with parchment paper. Using a small cookie scoop, scoop ganache and drop into the shredded coconut. Coat in coconut and then use your hands to roll into a ball. Coat in coconut again and transfer to a tray. Repeat alternating between coconut, cocoa powder, and pistachio. Refrigerate until ready to serve.

3?¼ cups crushed vanilla wafers
¾ cup confectioners' sugar
¼ cup unsweetened cocoa powder
3 tablespoons corn syrup
½ cup full-bodied red wine (Cabernet Sauvignon, Cotes du Rhone, Zinfandel, Shiraz or Barolo)
1 cup red decorator sugar

Steps:

  • In a large bowl, combine the vanilla wafers, confectioners' sugar, cocoa powder, corn syrup and red wine. Mix with a sturdy spoon or your hands until it becomes a uniform dough. Shape into 1 inch balls and roll in red decorator sugar. Store in a covered container in the refrigerator. Allow to come to room temperature before serving.
