Perfectly suited to any holiday tray or gift plate, these rich candies are a peppy and fudgy treat.

1 bag (12 oz) semisweet chocolate chips (2 cups)
1/3 cup corn syrup
1/2 teaspoon peppermint or almond extract
1/2 teaspoon vanilla
36 (6x6-inch) pieces clear plastic wrap or waxed paper

Steps:

  • Line 9x5-inch loaf pan with plastic wrap.
  • In 2-quart saucepan, melt chocolate over low heat, stirring constantly. Remove from heat. Add corn syrup, extract and vanilla; mix well. Quickly pour into pan; spread evenly.
  • Refrigerate uncovered about 30 minutes or until firm. Cut chews into 9 rows by 4 rows for 36 square pieces.
  • Place 1 chew in center of 1 end of individual plastic wrap square; roll up, folding up and twisting ends. Repeat to use up chews.

This is the old timey way to make millionaires. It is the method passed down to me from my mother and to her from her mother. I will never make them any other way. A good bit of the cook time for this recipe is actually "cool" time.

Number Of Ingredients 6

4 cups pecans
1 (14 ounce) package caramels
3 tablespoons water
6 Hershey chocolate candy bars
1 (12 ounce) package semi-sweet chocolate chips
3 (1 ounce) chocolate squares

Steps:

  • Melt caramels and water.
  • Add pecans and mix well.
  • Spoon out onto wax paper (work real fast).
  • Allow to cool completely.
  • Melt hershey bars, chocolate chips and chocolate squares together in double boiler.
  • Dip pecan clusters in chocolate and put back onto wax paper to cool.

  • Crush the candy canes (if they aren’t already crushed). Line a large, rimmed baking sheet with parchment paper. Melt the milk (or dark) chocolate in a heat-safe bowl in the microwave using 30-40 second intervals, stirring after each one. Two or three rounds in the microwave should be sufficient. Spread the chocolate out on the parchment in a thin, even layer. Using a large, offset spatula works well, if you have one. Put the pan in a cool place for about 10 minutes or until the chocolate is completely firm, either in the refrigerator or outside, if it’s chilly. Meanwhile, melt the white chocolate the same way, using 30-40 second intervals and stirring after each. Stir in the peppermint essential oil.
    Spread the white chocolate over the milk chocolate quickly and then sprinkle the crushed candy canes over the top. You’ll want to do these steps quickly because the cooled milk chocolate will make the white chocolate firm up quickly. You’ll want the white chocolate wet when you put the crushed candy canes on it so they’ll stick better. Let the white chocolate firm up completely (you can put the pan back in the fridge if you like) and then break it up into big pieces. The bark is ready to eat immediately or you can package it up to give away. Store it in a covered container and keep it away from heat.
