1 1/2 cup quick-cooking rolled oats
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon pumpkin pie spice
2 tablespoon Splenda brown sugar
1/3 cup granulated Splenda
2 tablespoon reduced-calorie margarine, melted
1 egg, slightly beaten
1/2 cup unsweetened applesauce
1/4 cup fat-free plain yogurt
1/3 cup raisins

Steps:

Preheat oven to 350 degrees. Coat 2 baking sheets with cooking spray.
In a large bowl, combine oats, flour, baking powder, baking soda, pumpkin pie spice, Splenda brown sugar, and granulated Splenda. Add margarine and blend into oats mixture. Add egg, applesauce, yogurt, and raisins. Mix gently to combine.
Drop by tablespoonful to form 24 cookies on prepared baking sheets.
Bake 20 to 22 minutes. Let cool completely on wire racks.

3/4 cup sugar-free dark chocolate baking chips

Steps:

In a large bowl, cream butter and erythritol until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In another bowl, whisk almond flour, baking soda and salt; gradually beat into creamed mixture. Stir in chips. , Preheat oven to 325°. Drop dough by tablespoonfuls 2 in. apart onto ungreased baking sheets. Using a wet finger, press down on cookies to flatten. Bake until edges are lightly browned, 7-10 minutes. Cool completely on pans on wire racks.
