  • Heat oven to 400° F. In a small saucepan, combine the apricots and 1/2 cup of water and bring to a boil. Remove from heat, cover, and let stand 5 minutes. Remove the apricots from the water, let cool, and coarsely chop.On a lightly floured surface, cut the sheet of puff pastry lengthwise into thirds, and cut each third in half (for six 4-by-6-inch pieces). Place 1 teaspoon of the preserves in the lower center of each piece of dough. Top with the chocolate chips and chopped apricots. Brush the edge of each pastry with egg and fold the pastry over the filling, pressing the edges together. Using the tines of a fork, seal the packets securely and brush the tops with the remaining egg. Sprinkle each with 1 teaspoon of sugar. Place the pastries on a cookie sheet lightly coated with vegetable cooking spray and bake 25 to 30 minutes, or until golden brown. In a small bowl, combine the ground coffee with the remaining sugar. • "1) Chop the chocolate into small pieces. Place in a bowl and add the butter. Melt together over simmering water. Set the mixture aside but keep it warm. 2) Sift the bread flour and baking powder together. Stir in the ground almonds meal and reserve. 3) Whip the eggs and sugar to the ribbon stage. Stir in the orange liqueur and orange zest. Mixing with a spoon or with the paddle attachment, pour the melted chocolate mixture into the eggs and combine. Stir in the reserved dry ingredients. The dough will be quite soft, even runny. 4) Place dough in the refrigerator for about 4 hours to become firm. 5) Divide the dough into six equal pieces. Using flour to prevent the dough from sticking, roll the pieces into 12-inch ropes. Cut each rope into 12 equal pieces.Note: The soft dough tends to stick to the knife. Dipping the knife in flour and scraping the blade clean will help. You can also a small ice cream scoop, no 40 (1 1/2 tablespoon) capacity, to portion the dough. Dip the scoop into hot water from time to time. 6) Roll the small pieces into balls and then roll the balls first in the granulated sugar and then twice in powered sugar. The cookies must be thoroughly coated with powered sugar in order to remain white after baking. Place the balls on sheet pans lined with baking paper. Press down lightly, just enough to keep from rolling. 7) Bake at 375 F, for approximately 20 minutes or until baked through. The cookies will puff up, leaving a cracked white crust on the outside."
