2 cups flaked coconut
2 cups miniature colored marshmallows
2 cups crushed graham crackers
1 (14 ounce) can sweetened condensed milk
1 cup chopped walnuts
10 candied cherries, quartered

Steps:

  • Sprinkle coconut evenly on a sheet of waxed paper. In a medium bowl, stir together marshmallows, graham cracker crumbs, condensed milk, walnuts and cherries. Shape into a log. Place on waxed paper and roll in coconut. Wrap with waxed paper and refrigerate until firm.

1 package (10 ounces) large marshmallows
1/4 cup butter, cubed
1/4 cup peanut butter
5-1/2 cups crisp rice cereal
1-1/3 cups semisweet chocolate chips
3/4 cup butterscotch chips

Steps:

  • Line a 15x10x1-in. pan with waxed paper; grease the paper and set aside. In a large microwave-safe bowl, combine the marshmallows, butter and peanut butter. Cover and microwave on high for 1-1/2 minutes; stir until well blended. Stir in cereal until well coated. Spread into prepared pan. , In a microwave-safe bowl, combine chocolate and butterscotch chips. Microwave, uncovered, on high for 1-1/2 minutes. Stir; spread over cereal mixture to within 1 in. of edges. Roll up jelly-roll style, starting with a short side, peeling waxed paper away while rolling. Place seam side down on a serving plate. Refrigerate for 1 hour or until set. Cut into 1-in. slices.

Fold in the vanilla and sifted cocoa powder.Lightly whisk 1/3 of the whipped egg whites into the egg yolk mix to lighten it, then fold the remaining egg whites in, taking care to knock as little air out as possible.Pour the cake batter into the lined baking sheet and bake in the preheated oven for 20 minutes or until springy to the touch.Marshmallow frostingWhile the sponge is baking, prepare the marshmallow frosting. Place the egg whites in a large glass or metal bowl and set over a saucepan of gently simmering water. Using a hand beater, whisk the egg whites until soft peaks, then slowly start sprinkling in the sugar.Whisk the meringue until it is warm to the touch, then remove from the heat, add the vanilla and beat until cool.Remove the cake from the oven ad allow it to cool a little before turning it out onto another piece of baking parchment which has been dusted in cocoa powder.Chocolate glazeMake the glaze by combining all the ingredients in a bowl, microwave until the chocolate is melted and the glaze is smooth. Cool to room temperature before drizzling over the log.Top the chocolate log with remaining marshmallow frosting and sprinkle with chopped up wafers or chocolate wafer bars.To assemblePlace the cake with the short side closest to you, then spread with the marshmallow, leaving a border at the end furthest from you.If you want, you can toast the marshmallow using a blow torch (or place under a very hot grill) until golden brown.Roll the cake up tightly, trim off the ends if necessary and dust with cocoa powder.Tip: If you don’t want to make your own marshmallow, simply melt store-bought white marshmallows with a little water.Serves 8-10Recipe reprinted with permission of The Kate Tin.
