Salted Chocolate Halva Recipe | Bon Appétit image

Salt and bittersweet chocolate lend a savory, sophisticated edge to this typically saccharine-sweet dessert. Halva can be a little tricky to make at first, and a candy thermometer is key to nailing the right temperature, which creates the desired flaky, crystallized texture. For a holiday party, package each slice up real cute and put it in a basket by the door for guests to take home.

Nonstick vegetable oil spray
1½ cups tahini
¼ tsp. kosher salt
4 Tbsp. black and white sesame seeds, divided
1½ cups sugar
4 oz. bittersweet chocolate
¼ cup dried edible flowers (such as cornflowers and/or roses; optional)
Flaky sea salt
A candy thermometer

Steps:

  • Lightly coat an 8½x4½" loaf pan with nonstick spray and line with parchment paper, leaving a 2" overhang on both of the long sides. Mix tahini, kosher salt, and 2 Tbsp. sesame seeds in a medium bowl to combine; set tahini mixture aside.
  • Cook sugar and ½ cup water in a small saucepan over low heat, stirring with a heatproof rubber spatula, until sugar is dissolved, about 4 minutes. Increase heat to medium-high and fit pan with candy thermometer. Cook syrup, brushing down sides of saucepan with a wet pastry brush as needed to dissolve any crystals that form, until thermometer registers 250°, 7–10 minutes. Immediately remove syrup from heat and gradually stream into reserved tahini, mixing constantly with spatula. Continue to mix just until halva comes together in a smooth mass and starts to pull away from the sides of bowl (less than a minute). Be careful not to overmix or halva will be crumbly. Working quickly, scrape into prepared pan and let cool.
  • Melt chocolate in a heatproof bowl set over a pan of simmering water (do not let bowl touch water), stirring often. Remove from heat. Invert halva onto a wire rack set inside a parchment-lined rimmed baking sheet; peel away and discard parchment. Pour chocolate over halva and sprinkle top with flowers (if using), sea salt, and remaining 2 Tbsp. sesame seeds. Let sit until chocolate is set before serving, about 30 minutes.
  • Do Ahead: Halva can be made 3 days ahead. Store tightly wrapped at room temperature.

560 grams (18 ounces) flour
1 tablespoon dry yeast
100 grams (3 ? ounce) sugar
100 grams (3 ? ounce) soft
Butter or margarine
2 eggs
¾ cup milk or milk substitute
1 teaspoon salt
1 teaspoon vanilla extract
Chocolate spread
Halva crumbs
1 egg

Steps:

  • 1. Knead all the ingredients into a smooth and flexible dough. 2. Let the dough rise until doubled in volume. 3. Roll out a large rectangle about half an inch thick. 4. Spread the chocolate spread generously over the dough. 5. Sprinkle the halva crumbs over the chocolate. 6. Roll up the dough lengthwise and press down slightly. 7. Cut with a sharp knife into halves and braid a form. 8. Brush with egg and leave for 15 minutes. 9. Preheat oven to 340 degrees and bake for about 25 minutes, until golden.   • Line a 8”-x-8” pan with parchment paper. Place tahini and salt in a large bowl. Place a kitchen towel under the bowl — this will help when stirring.  In a medium pot over medium heat, combine sugar, water, and vanilla bean seeds. If you are using vanilla extract, add it to the tahini mixture. Give it a stir, then without stirring, bring mixture to 245°. Use a wet pastry brush to wipe down sides of pan as sugar crystals form.  Once mixture is heated to 245°, carefully and slowly pour syrup into tahini mixture while stirring and continue to stir until fully combined and mixture thickens. Careful to not over mix after it thickens or your halva will be too crumbly.  Pour mixture into prepared pan and smooth top. Let cool to room temperature, then refrigerate until chilled, at least 3 hours. Add cardamom to tahini mixture. After adding sugar mixture to tahini, stir in ½ cup of pistachios.  Pour mixture into prepared pan top with remaining ¼ cup pistachios, pressing them in and refrigerate until chilled, at least 3 hours.  After stirring in sugar mixture to tahini, add chocolate to bowl and let sit for 30 seconds. Gently stir in chocolate leaving streaks.  Pour into prepared pan and refrigerate until chilled, at least 3 hours.  Add coffee to tahini with salt and stir until combined.  Heat and add sugar mixture as directed.
