I had this at a Christmas gathering. A friend of mine since we were little, Glenda Helton Clark, made it and it was absolutely delicious. I asked her for the recipe and here it is. Enjoy!!

Number Of Ingredients 12

2 small boxes of french vanilla pudding
3 cup(s) milk
1 box(es) graham crackers
1 small cool whip
FROSTING
1 stick(s) margarine
3 tablespoon(s) cocoa
6 tablespoon(s) milk
1 teaspoon(s) vanilla
1 box(es) powdered sugar
OR
1 - container chocolate frosting

Steps:

  • Mix pudding and milk stirring often until pudding sets up. Fold in cool whip.
  • In a 9x13 pan,place a layer of graham crackers in bottom. Spoon half of the pudding mixture on top of the of graham crackers. Place another layer of graham crackers and put remaining pudding. Finish with last layer of crackers.
  • FROSTING:Mix margarine, cocoa, and milk together in a pot and heat on the stove until it bubbles. Add powdered sugar, stirring until completely blended. Remove from heat and add vanilla. Pour immediately over the top of graham crackers until completely covered.
  • Refrigerate for 4-6 hours before serving. Makes 12 servings
  • Alternative frosting: Open chocolate frosting container, remove all aluminum foil from top. Microwave for 45 to 60 seconds until smooth and thin. Pour over cake as with the homemade frosting.

2 ounces unsweetened chocolate
3 tablespoons butter
3 tablespoons milk
2 tablespoons Karo syrup
1 teaspoon vanilla
1 1/2 cups powdered sugar

Steps:

  • Line buttered 9 x 12 dish with graham crackers.
  • Combine pudding mix with milk.
  • Fold in Cool Whip.
  • Pour half of the mixture over crackers.
  • Add second layer of crackers.
  • Add remaining pudding mixture.
  • Add final layer of graham crackers.
  • Over medium heat, melt chocolate glaze except for the powdered sugar.
  • Remove from heat.
  • Beat in 1-1/2 cups powdered sugar.
  • Pour over crackers.
  • Refrigerate overnight.
