The trick to professional chocolate-dipped caramels? Legendary chocolatier Jacques Torres shares his easy recipe.

Number Of Ingredients 5

1 pound dark chocolate
chopped into small pieces
3 to 4 dozen Caramels
Flaky sea salt
for sprinkling

Steps:

  • To temper the chocolate, place in a microwave-safe glass bowl
  • Heat for 30 seconds at a time on high power until most of the chocolate is melted; the chocolate will retain its shape even when mostly melted
  • Whisk until smooth
  • Working 1 caramel at a time, dip each square into the bowl of tempered melted dark chocolate
  • Using a fork, remove each caramel, letting excess chocolate drip back into bowl
  • Place chocolate-covered caramels onto a parchment-lined baking sheet, sprinkle with flaky sea salt and let set completely

This is absolutely delish! Regular caramels don't stand a chance! I got this from Southern Living. My changes are in parentheses. Time does not include candy standing or chilling. I've been told these taste like Riesen chocolate covered caramels. :)

Yield 10 dozen, 60 serving(s)

Number Of Ingredients 7

1 cup sugar
1 cup butter
1 cup dark corn syrup (I used light)
1 (14 ounce) can sweetened condensed milk
1 teaspoon vanilla
2 1/2 cups semi-sweet chocolate chips
2 tablespoons shortening (I use 1/8 block shredded paraffin)

Steps:

  • Over medium heat, bring first 3 ingredients to a boil in a saucepan; cook for 7 minutes, without stirring.
  • Stir in condensed milk, and bring back to boil. Cook, stirring constantly until a candy thermometer reaches 245.
  • Remove from heat, and stir in vanilla.
  • Pour into lightly greased 8x8 greased baking dish.
  • Let stand 8 hours at room temperature.
  • Cut caramel into 1/2 inch squares. If you like, you can shape into balls. (I skipped the shaping).
  • Melt chocolate and shortening or paraffin in saucepan over medium heat. (I melted mine in the microwave for about 1-1/2 to 2 minutes, stirring every 30 seconds). Remove from heat.
  • Dip balls into melted chocolate mixture; place on greased sheet. Chill 8 hours.

  • Lightly oil a sheet of parchment paper and line 2 baking sheets with wax paper. Invert the caramel onto the parchment and peel off the foil. Using a sharp knife, cut the caramel into 1-inch-wide strips and then into 1-inch squares. Dip the squares into the chocolate, tap off the excess and transfer to the wax paper on the baking sheets. Sprinkle lightly with sea salt and refrigerate for 10 minutes. Alternatively, wrap the plain caramel squares in wax paper and tie with thread.
