We love the cinnamon in Mexican chocolate. For this pie, we surround a smooth chocolate-pudding filling with cinnamon—a crumbly spiced graham cracker crust below and cinnamon whipped cream on top.

5 tablespoons unsalted butter, melted
1 1/2 cups cinnamon graham cracker crumbs (from about twelve 5-by 21/2-inch crackers)
2 tablespoons sugar
1/8 teaspoon salt
6 ounces fine-quality bittersweet chocolate (no more than 60% cacao if marked)
2 tablespoons cornstarch
1/3 cup packed light brown sugar, divided
2 whole large eggs
2 large egg yolks
2 cups whole milk
1/2 cup heavy cream
1/8 teaspoon salt
1/2 stick unsalted butter, cut into tablespoons
1 teaspoon pure vanilla extract
1 1/2 cups chilled heavy cream
5 tablespoons confectioners sugar
1/2 teaspoon cinnamon
1 (3-to 4-inch-thick) chunk bittersweet chocolate

Steps:

  • Preheat oven to 350°F with rack in middle.
  • Stir together all crust ingredients. Press over bottom and up side of a 9-inch pie plate. Bake until set, 12 to 15 minutes, then cool.
  • Melt chocolate in a large bowl.
  • Stir together cornstarch and 2 tablespoons brown sugar in a small bowl.
  • Whisk together whole eggs and yolks in another bowl, then whisk in cornstarch mixture.
  • Stir together milk, cream, salt, and remaining brown sugar in a heavy medium saucepan and bring just to a boil over medium heat. Pour half of milk mixture into egg mixture in a slow stream, whisking, then pour egg mixture into remaining milk mixture. Bring to a boil over medium-low heat, whisking constantly, then boil, whisking, 1 minute. Remove from heat and whisk in butter and vanilla. Strain through a fine-mesh sieve into melted chocolate and whisk to combine.
  • Transfer hot filling to crust and chill, its surface covered with parchment, until filling is cold, about 3 hours.
  • Beat cream with confectioners sugar and cinnamon using an electric mixer until it holds stiff peaks. Spoon over chilled filling.
  • Hold chocolate in your hands (or microwave on low power in 10-second intervals) until surface softens slightly. Using a vegetable peeler (preferably Y-shaped), "peel" large chocolate curls onto a paper towel. If curls are too brittle or don't form easily, rewarm chocolate just until surface softens.
  • Sprinkle curls on pie.

1?½ cups graham cracker crumbs
¼ cup butter, melted
2 tablespoons brown sugar
2 (1 ounce) squares bittersweet chocolate
2 tablespoons heavy whipping cream
3 cups low-fat milk
¾ cup white sugar
2 eggs
½ cup all-purpose flour
2 tablespoons Irish whiskey
4 bananas
2 tablespoons lemon juice
1 cup heavy whipping cream
2 tablespoons Irish whiskey

Steps:

  • Preheat the oven to 375 degrees F. Combine the graham-cracker crumbs with the butter and brown sugar in a medium bowl, and stir well. Transfer the mixture to a 10 inch pie plate, and pat it evenly along the bottom and sides.
  • Bake the crust for 7 to 9 minutes, or until edges darken slightly. Let the crust cool.
  • Melt the chocolate with the 2 tablespoons cream over simmering water in the top of a double broiler or in a heat proof bowl set on top of a saucepan. Whisk the chocolate and cream until they form a smooth liquid. Take the pan off the heat, and spoon the chocolate mixture onto the graham-cracker crust. Let the chocolate cool for at least 15 minutes.
  • Meanwhile, make the filling. Heat the milk in a heavy bottomed saucepan. When the milk is just about to boil, take the pan off of the heat.
  • In a medium bowl, whisk together the sugar, eggs, and flour. Slowly add the hot milk to the bowl, whisking constantly. Then transfer the mixture to the saucepan.
  • Whisking constantly, bring the mixture to a boil over medium heat, and continue whisking while it boils for 3 minutes. Take the pan off the heat, and add the 2 tablespoons whiskey. Let the filling cool for 20 minutes.
  • Slice the bananas, and toss them with the lemon juice. Lay the banana slices on the chocolate lined crust. Pour the filling over and chill the pie for at least 2 hours.
  • Whip one cup cream to stiff peaks, add 2 tablespoons whiskey and serve with pie.
