1/2 cup brown sugar, packed
1/4 cup cornstarch
3 tablespoons unsweetened cocoa powder
1 tablespoon instant coffee
1 dash salt
2 cups non-fat soymilk
2 ounces bittersweet chocolate, chopped
1 teaspoon vanilla

Steps:

  • In a saucepan, mix brown sugar, cornstarch, cocoa powder, coffee and salt. Add slowly soy milk and bring to boil at medium heat.
  • Reduce heat and let simmer for 1 minute or until thicken. Remove saucepan from the heat. Add chocolate and stir until melted. Add vanilla and stir.
  • Spread pudding in 4 individual serving dishes. Cover the surface with plastic wrap and put in the fridge for at least 4 hours.

350 milliliters milk
150 milliliters stronger Coffee (freshly brewed)
100 grams Dark couverture chocolate
1 generous pinch Orange zest
3 egg yolks
40 grams sugar
1 tablespoon cornstarch

Steps:

  • Combine the milk (up to 4-5 tablespoons) with the coffee, heat with pieces of broken chocolate and orange zest while stirring. In a bowl, beat the egg yolks with the sugar until foamy, stir in the cornstarch and the remaining milk.
  • While stirring, stir in the hot chocolate coffee milk, pour back in the pot and let thicken.
  • Beat the mixture briefly and distribute the pudding in heat-resistant dishes. Allow to cool and refrigerate to cool completely.

Reduce heat to low; cook and stir 2 minutes longer., Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Stir in vanilla. Cool. Fold in whipping cream. Chill. Garnish with additional whipped cream and chocolate if desired.
