Not your regular run-of-the-mill chocolate chip cookie. Funnily enough, in Israel, Spanish peanuts are called American peanuts.

2/3 cup softened unsalted butter
1 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup all-purpose flour
1/2 cup cocoa
1/2 teaspoon baking soda
1 teaspoon salt
1 cup semi-sweet chocolate chips
1/2 cup Spanish peanut

Steps:

  • Preheat the oven to 350°F.
  • In a bowl, combine the butter and sugar, and, using an electric mixer, beat until light and creamy.
  • Beat in the eggs and vanilla and continue to mix for 2 minutes.
  • In another bowl, stir together the flour, cocoa, baking soda, and salt.
  • Gradually stir the flour mixture into the butter mixture.
  • Stir in the chocolate chips and nuts.
  • Drop by tablespoonfuls onto a baking sheet, leaving 2 inches between each mound of dough.
  • Bake until set, 10-12 minutes.
  • Let cool for several minutes on the baking sheets before transferring to a wire rack.
  • The cookies will be soft and chewy.

2 3/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/4 cups (2 1/2 sticks) Vermont Creamery Sea Salt Cultured Butter - 82% Butterfat softened
1 cup firmly packed brown sugar
3/4 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups (72% cacao) dark chocolate chips
Fleur de Sel

Steps:

  • Heat oven to 350°F. Line 3 baking sheets with parchment paper; set aside.
  • Combine flour, baking powder, baking soda, and salt in bowl. Set aside.
  • Place butter, brown sugar, and granulated sugar in bowl of stand mixer fitted with paddle attachment.  Beat on high speed for 4 minutes, scraping sides occasionally, until mixture is light and fluffy. Add vanilla and eggs, one at a time, beating well after each addition. Add flour mixture gradually, beating at low speed just until combined. Add chocolate chips; beat on low until well distributed.
  • Scoop slightly underfilled 1/4 cupfuls of dough onto prepared baking sheets. Bake 15-17 minutes or until edges are deep golden brown.
