Vegan Chocolate Chip Cookies Recipe: How to Make It image

Yield 3-1/2 dozen.

Number Of Ingredients 11

1-1/4 cups packed dark brown sugar
1/2 cup canola oil
6 tablespoons vanilla soy milk
1/4 cup sugar
1/4 cup unsweetened applesauce
2 teaspoons vanilla extract
2-1/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1 cup dairy-free semisweet chocolate chips
1/2 cup finely chopped walnuts

Steps:

  • In a large bowl, beat the first 6 ingredients until well blended. Combine the flour, baking soda and salt; gradually add to sugar mixture and mix well. Stir in chocolate chips and nuts. Cover and refrigerate for 1 hour., Drop by rounded tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Bake at 375° for 10-12 minutes or until edges are lightly browned. Cool for 1 minute before removing from pans to wire racks.

I found this on a diabetic recipe site and have made them several times since. They don't taste low sugar and produce a very soft flavorful cookie. I hope you'll like them, too!

Yield 36 cookies

Number Of Ingredients 11

1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup margarine
1/2 cup sugar (I use 1/2 cup Splenda)
1/4 cup light brown sugar
1 large egg
1/4 cup unsweetened applesauce
2 tablespoons 1% low-fat milk
2 teaspoons vanilla extract
1/2 cup chocolate chips

Steps:

  • Preheat oven to 350F.
  • Lightly coat 2 baking sheets with cooking spray.
  • In a large bowl, whisk together flour, baking soda, and salt.
  • In a large bowl, with an electric mixer at medium speed, beat the margarine until fluffy.
  • Add the sugars, egg, applesauce, milk, and vanilla and beat one minute.
  • Stir in chocolate chips and the flour mixture.
  • Drop the dough by teaspoonfuls onto the prepared baking sheet and bake until lightly browned, 14-16 minutes.
  • Remove and cool on a baking rack.

Combine the flour, baking soda, baking powder and salt; add to creamed mixture just until combined. Fold in chocolate chips. , Spoon about 1 tablespoon of batter into each greased or paper-lined mini-muffin cup. Bake at 375° until a toothpick inserted in the center comes out clean, 10-13 minutes. Cool in pans for 5 minutes before removing to wire racks. Serve warm.
