The marshmallows add an incredible chewy texture and combine two classics: chocolate chip cookies and s’mores.

Number Of Ingredients 4

2 cups crushed graham crackers
1 cup margarine or butter
Favorite chocolate chip cookie recipe
3 cups mini marshmallows

Steps:

  • 1. Preheat oven to 350°F. 2. Melt butter or margarine. 3. Mix with crushed graham crackers and press into bottom of 9x13" baking pan lined with parchment paper. 4. Bake for fifteen minutes. 5. While crust is baking make chocolate chip cookies. 6. Remove crust from oven and sprinkle 2 cups of marshmallows over crust. 7. Top with chocolate chip cookie dough. 8. Press into pan, if necessary. 9. Top chocolate chip cookie dough with remaining marshmallows, press into dough. 10. Bake for twenty minutes. 11. Cool and cut into bars. 12. Store cookies in sealed container or ziplock bag until ready to serve.  13. Can serve warm with a scoop of ice cream; preheat oven to 400°F and warm cookies for five minutes. Number Of Ingredients 4

1/4 cup butter, cubed
1 package (10 ounces) large marshmallows
1 package (12 ounces) Golden Grahams cereal
1/3 cup milk chocolate chips, melted

Steps:

  • In a large saucepan, melt butter over low heat. Add marshmallows; cook and stir until blended. Remove from heat. Stir in cereal until coated., Press into a greased 13x9-in. pan using a buttered spatula. Drizzle with melted chocolate. Cool completely before cutting. Store in an airtight container.

  • Preheat oven to 375º and line two large baking sheets with parchment paper. Make cookie dough: In a large bowl using an electric mixer (or in a stand mixer), beat butter and sugars until light and fluffy, about 2 minutes. Slowly beat in vanilla extract and eggs until evenly incorporated. In a separate bowl, mix flour, baking soda, and salt. Stir into butter-sugar mixture until just combined, then fold in chocolate chips. Make s'mores: Cut each marshmallow in half lengthwise. Sandwich halved marshmallow and one square chocolate between two squares of graham cracker. Repeat with remaining s'more ingredients. Assemble cookies: Scoop approximately 1/4 cup of cookie dough, flatten into a round slightly larger than the s'more, place on prepared baking sheet, and place prepared s'more on stop. Scoop another 1/4 cup of cookie dough, flatten, and use to cover s'more until no graham cracker is visible. Flip cookie so first scoop of dough is now the top of the cookie. Repeat until remaining dough and s'mores are used. Refrigerate on baking sheets for 10 to 15 minutes. Bake cookies until lightly golden, 16 to 18 minutes. Let cool 10 minutes on baking sheet before serving.
