1 cup 80% fat margarine (100 calories per tablespoon)
1 cup packed brown sugar
½ cup granulated sugar
½ teaspoon baking soda
½ teaspoon salt
2 eggs
1 teaspoon vanilla
2?¾ cups all-purpose flour
1 12 ounce package (2 cups) semisweet chocolate pieces or miniature candy-coated semisweet chocolate pieces
1?½ cups chopped walnuts, pecans, or hazelnuts (filberts), toasted if desired (optional)

Steps:

  • Preheat oven to 375°F. In a large bowl beat margarine with an electric mixer on medium to high speed for 30 seconds. Add the brown sugar, granulated sugar, baking soda, and salt. Beat until mixture is combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Stir in chocolate pieces and, if desired, nuts.
  • Drop dough by rounded teaspoons 2 inches apart onto ungreased cookie sheets.
  • Bake in the preheated oven for 8 to 9 minutes or until edges are just light brown. Cool on cookie sheet for 2 minutes. Transfer to a wire rack; cool completely.

1 (12 -24 ounce) package semi-sweet chocolate chips

Steps:

  • Heat oven to 375*F.
  • In large bowl, beat sugar, brown sugar and margarine until light and fluffy.
  • Add vanilla and eggs; blend well.
  • Add flour, baking soda and salt; mix well.
  • Stir in chocolate chips.
  • Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets.
  • Bake at 375*F for 8 to 10 minutes or until light golden brown.

  • CHANGES: The first change I made was: 1/2 cup of softened (not melted) butter and 1/2 cup of unsweetened applesauce both and the eggs at room temp.This reduces the amount of fat per cookie and increases the fiber a bit....you can not taste it. 2nd Change: Use Cake flour instead of All Purpose Flour.....You can make you own using DIY Cake Flour by Candy Hummer, found here on JAP. 3rd Change: compliments of Annette AKA greeneyz Chill the dough, and spoon (I use a cookie scoop) over night or at least several hours....and between each loading of the cookie sheets. Only place cookie dough on completely cooled cookie sheets.

I made a platter a few months ago for a friend giving a luncheon at her job, and the cookies were almost gone before people even finished the entrees. People were coming into the room, grabbing handfuls and pocketing them, thinking nobody was watching. I have to admit, I was very flattered! Note: The recipe calls for 4 sticks of butter or margarine. Do not substitute anything else, like oil, or shortening, or applesauce -- it just won't be the same. I use either all butter, or often will use 1/2 butter and 1/2 margarine, with no loss of quality in the results. The recipe halves easily.
