unsalted butter 150g, softened, plus extra for the tin
golden caster sugar 150g
bananas 2 ripe, peeled and mashed with a fork
self-raising flour 200g
baking powder 1 tsp
vanilla extract 1 tsp
milk or dark chocolate chips 125g
unsalted butter 2 tbsp
bananas 2, peeled and cut lengthways
golden caster sugar 1 tbsp
Nutella or chocolate spread 4-5 tbsp, warmed

Steps:

  • Heat the oven to 180C/fan 160C/gas 4 and butter and line a 900g loaf tin. Whisk the butter and sugar in a large bowl using electric beaters for 2 minutes until creamy and pale. Add the eggs and whisk for another minute. Fold in the bananas, flour, baking powder and vanilla. Tip in the chocolate and mix well.
  • Scoop the mixture into the tin and bake for 45-50 minutes or until a skewer inserted into the middle comes out clean. Leave to cool in the tin for 5 minutes before putting on a wire rack to cool completely.
  • Meanwhile, heat the butter in a frying pan over a medium-high heat and, once melted, cook the bananas, cut-side down, for a couple of minutes until slightly golden. Sprinkle over the sugar and cook for another minute until caramelised. Spread the Nutella on top of the cake, put the caramelised bananas on top and serve.

(1 stick) unsalted butter, melted

granulated sugar

large egg plus 1 egg yolk

1/4 c.

sour cream

1 tsp.

pure vanilla extract

3

ripe bananas, mashed

1/2 c.

semi-sweet chocolate chips

1/2 c.

chopped toasted walnuts

Steps:

  • Preheat oven to 350º. Line a loaf pan with parchment paper and grease with cooking spray.
  • In a large bowl, whisk together flour, baking soda, and salt.
  • In another large bowl, mix together melted butter, sugar, egg and egg yolk, sour cream, and vanilla. Add mashed bananas and stir until combined. Gradually add dry ingredients to wet ingredients until just combined. 
  • Fold in chocolate chips and walnuts and transfer to prepared loaf pan.
  • Bake until a toothpick comes out clean, about 1 hour. Let cool 10 minutes in pan, then turn out onto a cooling rack to cool completely.
