6 ounces good semisweet chocolate, chopped
2 ounces good bittersweet chocolate, chopped
1/4 cup orange liqueur (recommended: Grand Marnier)
1/4 cup water
1 teaspoon pure vanilla extract
1 teaspoon grated orange zest
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
8 extra-large eggs, at room temperature, separated
1/2 cup plus 2 tablespoons sugar
Pinch kosher salt
1/2 cup cold heavy cream
Whipped Cream, recipe follows, for decoration
Mandarin oranges, drained, for decoration
2 cups (1 pint) cold heavy cream
2 tablespoons sugar
Dash pure vanilla extract

Steps:

  • Combine the 2 chocolates, orange liqueur, 1/4 cup water, and the vanilla in a heat-proof bowl. Set it over a pan of simmering water just until the chocolate melts. Cool completely to room temperature. Whisk in the orange zest and butter until combined.
  • Place the egg yolks and 1/2 cup of the sugar in the bowl of an electric mixer fitted with the paddle attachment. Beat on high speed for 4 minutes, or until very thick and pale yellow. With the mixer on low speed, add the chocolate mixture. Transfer to a large bowl.
  • Place 1 cup of egg whites (save or discard the rest), the salt, and 1 tablespoon of the sugar in the bowl of an electric mixer fitted with the whisk attachment. Beat on high speed until firm but not dry. Whisk 1/4 of the egg whites into the chocolate mixture; then fold the rest in carefully with a rubber spatula.
  • Without cleaning the bowl or whisk, whip the heavy cream and the remaining tablespoon of sugar until firm. Fold the whipped cream into the chocolate mixture. Pour the mousse into individual dishes or an 8-cup serving bowl. Chill and decorate with whipped cream and oranges. Serve with extra whipped cream on the side.
  • Whip the cream in the bowl of an electric mixer fitted with the whisk attachment. When it starts to thicken, add the sugar and vanilla and continue to whip until the cream forms stiff peaks. Don't overbeat, or you'll end up with butter!

Someone gave us a gift of these delicious orange slices. These tangy oranges and creamy chocolate are an unbeatable combination. They look fancy and colorful, and are easy to make. A Christmas favorite. These do take a while to make but are well worth it. The orange slices are delicious even without the chocolate. Drying time not included in time. NOTE: When cooking the orange slices DO-NOT STIR. If someone is helping you make sure they do not stir just them push down on the orange slices as recipe says. :) I cut the slices in half again after cooking.

4 valencia oranges
2 cups water
3 1/2 cups granulated sugar
3 cups granulated sugar, as needed for coating
2 lbs semisweet chocolate, chopped into small pieces (reserve a 2-ounce chunk)

Steps:

  • Cut the oranges in half lengthwise, with the cut side down slice the oranges crosswise into 1/4-inch slices, (you will have 1/2 of a slice of orange:DO-NOT peel),discard the ends.
  • In a 10-inch saute pan combine the water and the 3 1/2 cups of sugar, stir to blend, then bring to a boil over medium heat.
  • Add the orange slices, separating them, and simmer them gently for 1 hour uncovered; peroidically dunk any floating slices.
  • Remove from heat and cool to room temperature.
  • Remove the orange slices, with a slotted spoon and transfer to a cooling rack set over a baking sheet to let drain and dry for 24 hours; NOTE; I dryed them in my oven set for for baked goods, or if oven has a pilot light, this worked great if it is a damp day.
  • After drying the slices, toss them in the granulated sugar and reserve them, do not stack them as they will stick together.
  • While you are coating the orange slices with the sugar, have the chocolate melting slowly in the top of a double boiler over 120 degree water: Chocolate can be melted in the microwave.
  • When all the chocolate is melted and creamy and registers 100 degrees on an instant themometer, remove the top section from the double boiler.
  • Add the 2-ounce of chocolate and gently stir until the thermometer reads 88 degrees to 91 degree, then remove what remains of the chunk of chocolate.
  • Now dip the orange slices 2/3 of the way into the chocalate; gently scrape off excess chocolate against the side of the pan.
  • Place the orange slices on a sheet of wax paper to set.
  • Work quickly with the slices if the chocolate becomes to thick for dipping, place it over the 120 degree water again until it reaches 88 to 91 degrees.

  • First make the ganache, preferably the night before. In a saucepan over medium heat, add the cream and heat until it reaches boiling point and immediately remove from the heat. Stir often using a spatula to stop the cream from catching on the bottom of the saucepan. Whisk in all the chocolate, until they have melted in. Use a spatula to make sure no chocolate has fallen to the bottom. It should look glossy. Place in a shallow dish and allow to cool to room temperature. Cover with greaseproof paper and place in the and allow to set for at least 2 1/2 hours, or ideally overnight.   Pre-heat oven 180ºC (160ºC Fan) and over-line a 25 x 35cm baking tray with either greaseproof paper. In a mixing bowl whisk together the eggs and sugar until it's light in colour and at least double in size. Sift in the flour and cocoa powder and fold in using a wooden spoon or spatula. Make sure to mix from the bottom up. Pour the mixture onto the baking tray, making sure it's level using a palette knife and bake in the oven for 7-8 minutes.  Meanwhile, scatter some caster sugar on another sheet of greaseproof paper, the same size as the one on the baking tray. This will help prevent the cooling sponge from sticking. When the sponge is cooked, remove from the oven and allow to cool for a few minutes. Carefully turn the sponge out on to the sugared greaseproof paper and carefully peel away the greaseproof the sponge was cooked on. Allow to cool completely, at least 15-20 mins. To assemble, spread 1/3 of the set ganache on to the sponge. To roll, starting at the short end, use the greaseproof to tightly roll the cake into a log. Let it cool completely.  To decorate, unwrap the yule log and place onto a rectangle cake board or whatever you will use to serve on. Get a palette knife and spread the rest of the ganache over it. It doesn’t have to be smoothly on, you want it to resemble a log! Alternatively, you can use a star pipping nozzle and pipe the ganache in lines on the log. Finish it off with a nice dusting of icing sugar or cocoa powder and any edible Christmas decorations you wish to add.
