An easy but good cookie to make on a hot day when you don't want to turn on oven. So easy that even the kids can help.

Yield 5 dozen

Number Of Ingredients 7

½ cup milk
2 cups white sugar
3 tablespoons unsweetened cocoa powder
3 tablespoons crunchy peanut butter
½ cup butter
3 cups rolled oats
1 teaspoon vanilla extract

Steps:

  • Wipe 1" wide band of butter around the rim of a 3 quart pan to prevent boil-over.
  • Combine milk, sugar, cocoa, butter and peanut butter.
  • Stir and bring to boil over medium heat. Let boil for 1 1/2 minutes, do not stir.
  • Remove from heat. Stir in oats and vanilla. Stir until oats evenly distributed.
  • Drop by teaspoon onto waxed paper. Cool. Makes 4 to 5 dozen.

2/3 cup evaporated milk, undiluted
1-2/3 cups sugar
1/2 teaspoon salt
1 1/2 cups marshmallows, diced
1-1/2 cups semisweet chocolate chips
1 teaspoon vanilla

Steps:

  • Mix 2/3 cup (one small can) Carnation evaporated milk, 1-2/3 cups sugar, and 1/2 teaspoon salt in saucepan over medium heat.
  • Bring to boil; cook for 5 minutes, stirring constantly. When the milk starts to bubble around edges of pan is when you should start timing the 5 minutes.
  • Remove from the heat. Add 1-1/2 cups (16 medium) diced marshmallows, 1-1/2 cups semi-sweet chocolate chips, and 1 teaspoon vanilla.
  • Stir vigorously for 1 minute (or until marshmallows melt).
  • Pour into an 8-inch square buttered pan. Garnish with nuts.
  • Cool. Cut in squares.
