1 cup peanut butter
½ cup honey
¼ cup coconut oil
2 cups oats
1?¼ cups dark chocolate chips
1 cup shredded coconut
½ cup walnuts
1 teaspoon vanilla extract

Steps:

  • Stir peanut butter, honey, and coconut oil together in a saucepan over medium-low heat until melted and smooth. Remove pan from heat and add oats, chocolate chips, coconut, walnuts, and vanilla extract to the peanut butter mixture; stir to coat.
  • Spread the mixture into a 13x9-inch baking dish; refrigerate until set, at least 30 minutes. Cut into 20 bars.

Chocolate chip cookies as bars!

2 cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
1 cup shortening
¼ teaspoon salt
1?½ cups packed brown sugar
2 eggs
2 tablespoons milk
1 teaspoon vanilla extract
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In large bowl, cream shortening, eggs and brown sugar. Add in milk and vanilla extract and mix well. Gradually add in flour, baking powder, baking soda, and salt. Mix until well blended.
  • Fold in chocolate chips and stir until chips are evenly distributed in dough. Spread dough in pan and bake 25 to 30 minutes. Let cool before cutting into bars.
