Creamy Chive Potatoes Recipe | Bon Appétit image

When cooked just right, the potatoes will be tender but should still hold their shape.

4 large Yukon Gold potatoes (about 1 1/2 pounds), peeled, cut into 1/2-inch cubes
1 1/2 cups half-and-half
4 tablespoons (1/2 stick) unsalted butter
Kosher salt
1/4 cup hopped fresh chives

Steps:

  • Combine potatoes, half-and-half, and butter in a large saucepan; season with salt. Bring to a boil, reduce heat, and simmer very gently, stirring occasionally, until potatoes are tender (the tip of a paring knife meets no resistance) and sauce is thick, 25-35 minutes.
  • Season with salt; stir in most of the chives. Top with remaining chives before serving.

1/3 cup butter, melted
2 tablespoons minced chives
1/2 teaspoon salt
1/4 teaspoon garlic powder

Steps:

  • Peel a narrow strip around the middle of each potato. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. , Combine the butter, chives, salt and garlic powder in a small bowl. Drain potatoes; drizzle with butter mixture and toss gently to coat.

  • Preheat the oven to 350°. Butter a 9 x 13-inch baking dish. Combine the half-and-half and heavy cream in a large measuring cup. Using a mandoline or a very sharp knife, slice the potatoes very thinly. Place the potatoes in a large bowl. Drizzle with half of the half-and-half/cream mixture and set aside. In a large skillet over medium-low heat, melt the butter. Add the garlic and onion and cook, stirring occasionally, until translucent, about 4 minutes. Remove the foil and continue baking until the potatoes are tender and the top is golden brown and bubbly, at least 45 minutes more. Remove from the oven and let stand for 10 minutes. Sprinkle with the chives, then cut into squares and serve.
