1.5 lb winter melon
3 oz fish fillet
3 oz shrimp
1 oz yellow chives
4 oz imitation crab
3 egg whites
4 cups water
7 oz chicken broth
1 tsp salt
0.5 tsp sugar
0.5 tsp white pepper
0.5 tsp olive oil
1 tsp sesame oil
5 tbsp cornstarch
4 tbsp water
0.5 tsp white pepper
2 tsp cornstarch
0.5 tbsp water

Steps:

  • Assuming you were starting with a whole entire winter melon, we'd:
  • We'll be dicing our fish fillets (we used tilapia), shrimp (deveined, de-shelled), crab or imitation crab, and yellow chives. These are all cut into about 1 cm pieces.
  • Set the stove on high heat and start boiling water and chicken broth.
  • Once the pot has come to a boil, we'll add our winter melon to the pot, stir, and cover. Let the winter melon cook for 5-7 minutes. Once it comes to a boil again, we can proceed to thicken our soup.
  • Almost there! Like a true chef, my dad always tastes his dish in case he needs to adjust the flavor at all.

Healthy and warm Chinese Winter Melon Soup. Only 25 minutes with high pressure cooker.

1 pound winter melon ( , remove the skin and cut into cubes)
2 large ribs cut into sections
3-4 red dates
1 teaspoon dried shrimp
Green onion ( , chopped for garnishing)
Coriander ( , chopped for garnishing)
1 thumb ginger ( , smashed)
pinch of salt as needed

Steps:

  • Place ribs in clean water, bring to boil and continue cooking for 1-2 minutes. Transfer out and rinse under running water.
  • Cut the rind of winter melon and then cut into large chunks.
  • Place red dates, dried shrimp, smashed ginger, ribs and winter melon with enough water in high pressure cooker; cook for 15 minutes after boiling. Or you can use a stew pot or slow cooker; cook until the ribs and winter melon are soft.
  • Add salt before serving
  • Place some chopped green onion and coriander at bottom. And scoop the soup to serving bowl.
