This is a recipe for a traditional Chinese soup. I first tried it at Yong Sing in Honolulu. I found this recipe at chinesefooddiy.com. A couple of tips - do not use bouillon! Use either prepared broth (like that which one can buy in cartons) or, better yet, stock. As for the fungus which is the main ingredient, try Asian food stores for the dried fungus. If you live near a Chinatown, you'll probably have good luck at a Chinese grocery.

1/3 ounce dried white fungus (tremella)
3 cups chicken stock or 3 cups chicken broth
1 tablespoon white wine
1 teaspoon soy sauce
1/4 teaspoon msg (optional)

Steps:

  • Wash the fungus in warm water, drain, and cover with 2 cups boiling water.
  • Let soak until soft (15-20 minutes).
  • Drain the fungus and remove any stems or hard areas.
  • Wash in warm water and rinse 3 times.
  • Place in serving dish.
  • Combine stock, wine, soy sauce, and MSG (if using) in a pot over medium heat.
  • Bring to boil.
  • Ladle 1 cup of broth over the fungus and l0 minutes, then drain.
  • Reheat the remaining stock, add to the fungus, and serve.

I haven’t cooked the white fungus soup for a long time, and I have lost some white fungus recently. I plan to make iced white fungus soup in summer. It is healthy and beautiful, and the common people’s nourishing soup is the first choice~

1 flower Tremella
10 pcs Red dates
1 small handful brown sugar
1 pinch Wolfberry
Right amount water

Steps:

  • Prepare the ingredients. Today I tried to put rock sugar and brown sugar together to change the taste. You can put it selectively.
  • Wash the red dates, remove the pits and tear small pieces
  • Wash the white fungus with cold water foam and tear it into small flowers
  • Add enough water to the pot at one time, boil the white fungus under cold water, first boil on high heat and then turn to medium and low heat, add red dates and stew together
  • Add rock sugar (or brown sugar) to the simmer for about half an hour, add half of the sugar first, and then add as appropriate according to the sweetness you need
  • When the white fungus soup becomes thick and the gums are all simmered (it takes about an hour), put the wolfberry in it, and the pot will rise in a few minutes. Put the Tremella Soup to cool, seal it and put it in the refrigerator for a few hours, and then you can drink the iced Tremella Soup.
