Old-styled Chinese egg cake

Number Of Ingredients 5

2 middle size eggs ( ,room temperature eggs)
60 g cake flour ( ,1/2 US cup)
40 g castor sugar ( ,around 3 tablespoons+1 teaspoon)
5 g oil ( ,olive oil or other vegetable oil around 3/4 teaspoon)
warm water ( ,for speeding up the whipping process, not required in summer days.)

Steps:

  • Preheat the oven to 180 C around 350F.
  • Prepare a larger container and add half full warm water, then place your mixing bowl on the warm water. Add eggs and castor sugar. Whip at medium speed until light and fluffy. And then use low speed to remove some large bubbles. This step is the key of success and may take 12- 15 minutes until the mixture reach the ribbon stage.
  • Shift flour in. Then use a spatula to combine well. And lastly add oil and well combined too.
  • Prepare a mini 12 paper lined muffin tin mold and pour the batter in.
  • Bake at the middle rack for 15 to 20 minutes until the surface is well colored.

Perfect Chinese Steamed egg is also known as Chinese steamed egg custard. Only with egg, water, salt and some sesame oil, you can make this super smooth custard at home.

Number Of Ingredients 6

2 middle size eggs (, 2 or 3 eggs both works depending the wanted texture )
1 cup of water (, recommend using warmed boiled water , or milk or stock)
1/2 tsp. salt or to taste
2 tsp. sesame oil
2 tsp. light soy sauce
Chopped scallion (, optional)

Steps:

  • Gently whisk eggs with pinch of salt and water.
  • Strain the egg liquid and transfer to the container. Remove any bubbles on surface.
  • Set up the steamer, bring the water to a boiling and slow down the fire to simmer for 8 to 10 minutes depending on your container. For the time, please see note 1.
  • Remove from the fire and wait for 5 minutes to cool down a little bit.
  • Transfer the containers out. Drizzle some sesame oil and light soy sauce and garnish chopped spring onion on top.
  • Serve warm.

Cover the mixing bowl with cling wrap and allow the batter to rest for at least 30 mins. To Cook Prepare a steamer and bring water to a rolling boil. Place a 9-inch round pan into the steamer for about 3 mins to warm it up. Then, pour the batter into the pan and steam for 40 mins. To check if it’s ready, insert a tooth pick into the centre of the cake and remove it. The tooth pick should come out clean. Take the cake out from the steamer and set aside to cool down slightly. Serve warm or at room temperature.
