- Place washed and dried spinach in a large bowl.
- Combine sesame oil, sugar, vinegar, soy sauce, mustard and sesame seeds.
- Pour over spinach.
- Toss to coat.
- Let set 5 minutes.
- Toss again.
- Serve.
