CHINESE BOILED SHRIMP | CHINA SICHUAN FOOD

Number Of Ingredients 12

300 g fresh shrimp
1.5 tbsp. light soy sauce
10 thin ginger shreds
10 thin scallion shreds
1/2 tsp. sesame oil (, optional)
1 tsp. sugar
1.5 tbsp. clean water
2 scallions
1 tsp. salt
1 tsp. Sichuan peppercorn
water
2 chunks of ginger (, smashed)

Steps:

  • How to devein shrimp with shells and heads. Firstly use a kitchen shear to trim off the legs and the sharp part at the top of the head to avoid hurt.opening the carapace of the head. Then wash carefully under running water. Washing is extremely important for Chinese poached shrimp, as the head parts spoil the flavor.
  • In a large pot of water, add scallion, ginger, salt and Sichuan peppercorn (my personal favorite but optional). Bring the water to a boiling.
  • Keep high fire and place the shrimp in. After adding the shrimp, the temperature drops immediately to the poaching range.  Wait for around 1 minute or until the water begins to boil again.  Transfer out as soon as possible.
  • Mix all the ingredients for dipping sauce together and make sure the sugar is well dissolved. Serve with dipping sauce.

In this season of the year, we see more shrimp in the market here, and live shrimp are also sold. I like the authentic boiled live shrimp. When cooking the shrimp, just add the water to remove the fishy pepper and avoid any other seasonings. Also, don't have too much water, the maximum amount is the same as that of shrimp. It is not advisable to cook shrimp for a long time, just a few minutes. The shrimp cooked in this way fully retains the delicious taste and tenderness of the shrimp.

700 grams shrimp
5 grams pepper
10ml Soy sauce
10ml Balsamic vinegar
5ml sesame oil
20 grams Ginger garlic

Steps:

  • Soak the peppercorns in cold water in advance
  • Wash the shrimps and cut off the long beards
  • Pour the soaked pepper into the boiling pot along with the water used to soak the pepper
  • Pour the shrimp into the cooking pot. Add appropriate amount of water according to the situation, cover the pot and cook, and cook until the shrimp changes color
  • Chop the ginger and garlic and put it in a bowl.
  • Add soy sauce
  • Add balsamic vinegar
  • Add sesame oil and stir to make the sauce
  • Shrimp cooked, remove and drain the water, serve with the sauce
