1 whole broiler-fryer chicken
1/2 cup soy sauce, i use kikoman light soy
1/4 cup lemon juice
2 tablespoons honey
2 tablespoons sesame oil
1 teaspoon dry mustard
1/2 teaspoon ground ginger
1 clove garlic, minced
1/4 teaspoon ground black pepper

Steps:

  • Mix together soy sauce, lemon juice, honey, sesamme oil, dry mustard, ginger, garlic and ground black pepper to make the marinade.
  • Place chicken in a bowl or zip lock plastic bag.
  • Pour marinade over it.
  • Marinate in refrigerator for at least one hour, I marinate it for at least 12 hours.
  • Turn the chicken over in marinade occasionally.
  • Preheat oven to 350 degrees Fahrenheit.
  • Roast chicken on rack until chicken is dark brown and a fork can be inserted with ease, at least 1 1/4 to 1 1/2 hours.
  • Bring marinade to full boil and use to baste chicken every 15 minutes.

1 (4 pound) fresh or thawed whole roasting chicken
2 tablespoons Kikkoman Lite Soy Sauce
2 teaspoons dry sherry
1 teaspoon vegetable oil
1 large clove garlic, pressed
½ teaspoon fennel seed, crushed
½ teaspoon ground ginger
¼ teaspoon sugar
? teaspoon ground cloves

Steps:

  • Remove and discard giblets and neck from chicken. Rinse chicken under cold running water; drain well and pat dry with paper towels. Pierce chicken thoroughly with fork. Place chicken, breast side up, in shallow, foil-lined roasting pan.
  • Combine lite soy sauce, sherry, oil, garlic, fennel, ginger, sugar and cloves. Brush cavity and skin thoroughly with sauce mixture.
  • Roast in 325 degrees F. oven 1 hour and 45 minutes, or until meat thermometer inserted into thigh registers 180, brushing chicken occasionally with remaining sauce mixture during last 40 minutes of roasting time.
  • Remove chicken from oven and let stand 10 minutes before carving.

  • To Prep Clean the chicken with some water. Make sure to clean inside the cavity as well as the outside skin. Pat dry with some kitchen towels. Using some kitchen twine, tie the legs together, this will help the bird cook evenly in the oven. In a small bowl, mix all of the marinade ingredients together and rub it generously on the skin and in the cavity of the chicken. Place the garlic and ginger in the cavity of the bird. Place the bird in a large enough marinade bag and pour whatever is left of the marinade in with the bird. Seal the marinade bag and marinate the chicken in the fridge overnight. Once the chicken has marinated enough, remove the chicken from the marinade bag and remove the garlic and ginger. Leave the chicken out to air dry at room temperature until the skin is no longer wet. If you have a fan, turning it on will speed up this process. To Cook Turn on your oven and set to 200°C. Place your chicken in a roasting pan with a rack so that the fat and drippings can be collected. Once the oven has heated up, place the chicken on the lowest rack and roast for 45 minutes. At 45 minutes, flip the chicken around and roast the other side for another 15 minutes. While the chicken is roasting, mix the ingredients for the skin coating together. Once the chicken has roasted for an hour, brush the entire chicken with the skin coating mix. Then roast for a further 10 minutes on each side or until the skin turns a beautiful golden brown. Remove the chicken from the oven and allow to cool. Once cooled, cut up the bird into decent sized pieces and serve with the collected drippings together with steamed white rice.
