Total Time 6 hours 25 minutes

Prep Time 25 minutes

Number Of Ingredients 15

2?½ - 3 pound chicken drumsticks and/or thighs, skin removed
5 whole star anise
2 3 inch long strips orange peel*
1 2 inch piece fresh ginger, thinly sliced
3 stick cinnamon
2 cloves garlic, minced
1 teaspoon whole Szechwan peppercorns
2 14.5 ounce cans reduced-sodium chicken broth
¾ cup soy sauce
¼ cup packed brown sugar
1 tablespoon dry sherry
4 green onions, cut into 2-inch pieces
1 8 ounce package Chinese egg noodles
1 teaspoon sesame oil
2 tablespoons snipped fresh cilantro

Steps:

  • Place chicken in a 3-1/2- or 4-quart slow cooker. For a spice bag, cut an 8-inch square from a double thickness of 100-percent-cotton cheese cloth. Place star anise, orange peel, ginger, cinnamon, garlic, and peppercorns in center of square. Bring corners of cloth together; tie closed with clean 100-percent-cotton kitchen string. Add bag to slow cooker with chicken. In a bowl combine broth, soy sauce, brown sugar, sherry, and green onions. Pour over chicken.
  • Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3-1/2 hours.
  • Meanwhile, prepare noodles according to package directions. Remove chicken from cooking liquid. Strain liquid, discarding spice bag and solids; skim fat from cooking liquid. Serve chicken over noodles. Drizzle chicken with sesame oil and sprinkle with cilantro. Drizzle chicken and noodles with cooking liquid.

RED CHICKEN RECIPE | ALLRECIPES
This recipe was given to me by a friend of my mother. I made it once for my inlaws and ever since then I have had to make it at least once every two months. They love it... I sometimes use chicken thighs for this recipe instead of a whole chicken cut into portions.

KUNG PAO CHICKEN WITH FUNGUS RECIPE - SIMPLE CHINESE FOOD
I clearly remember that when I was young, my mother used to communicate with aunts in cooking. One of them is the most impressive. It is fried with peeled peanuts and diced meat. One is crispy, the other is soft and smooth; the other is white and yellow, and the other is red in sauce. It has a slightly spicy flavor, which I love very much. But I don’t know what it is called. I didn’t know it until I came to Norway. Almost every Chinese restaurant has this dish "Kong Pao Chicken". When I was working in a restaurant, I saw a young Norwegian come to buy almost every week, and only ordered this dish. He believed that this is the "heaven on earth"-all of Chinese cuisine.
I don't know what to do to be authentic. I only know that I have been influenced by my mother since I was a child, and I pay attention to color and fragrance. So I added a little black fungus. In addition to the white and yellow and red sauce, I added a bright black. Finally, I added some garlic sprouts. It looked very gratifying. My husband said that Chinese liquor is the most suitable.
