I don't know when, okra has slowly become my favorite.
In the hot summer, a cold okra is already very comfortable before you eat it. Of course, it tastes smoother and more comfortable!
Okra has high nutritional value and is rich in pectin, which protects the liver and lowers blood lipids very well. It is suitable for the elderly and children.

150 grams Okra
3 pcs Garlic cloves
20ml olive oil
10ml Soy sauce
10gram Sugar
5ml sesame oil
10ml Cool boiled water

Steps:

  • Wash the okra and garlic cloves and set aside.
  • Put water in the pot and bring to a boil, pour the okra and cook for 3 minutes to turn tender and green.
  • The stalks and tails of the blanched okra should be cut off according to the length.
  • The garlic cloves are crushed and smashed to make the juice, and pour into the cut okra.
  • Add olive oil, light soy sauce, sugar, and cold boil to the okra in turn, then add sesame oil and mix well and put on a plate.

If you think okra are slimy and unappealing, think again. Cook them briefly to give a soft crunch. This is a side dish you can have ready in 15 minutes.

500g (17¾oz) okra pods
2-3 large shallots, peeled
2-3 garlic cloves, peeled
1-2 red bird's-eye chillies, or another type of small, hot chilli, such as serrano
1-2 red banana chillies, or another type of mild chilli
3 Chinese sausages - lap cheong and/or yuen cheong
30ml (2tbsp) cooking oil, divided
Fine sea salt, as necessary

Steps:

  • Trim off the stem ends of the okra, then cut the pods into pieces about 8mm (? in) wide. Thinly slice the shallots and garlic. Cut the bird's-eye chillies into thin rounds, and the banana chillies on the diagonal into 3mm (1/8 in) pieces.  
  • Cut the Chinese sausages in half lengthwise, then slice them on the diagonal into 5mm (¼ in) pieces.  
  • Heat a wok (or large skillet) over a high flame. Pour in about 10ml (2 tsp) of cooking oil and heat for about 30 seconds. Add the Chinese sausage and stir-fry until the pieces are cooked and starting to char slightly, about two minutes. Transfer the pieces to a bowl, leaving behind as much oil and fat from the sausage as possible.  
  • Place the wok (no need to wash it) back over the flame and add about 5ml (1 tsp) of oil. Add the shallot, garlic and both types of chillies, then stir-fry for about a minute, or until the shallot is wilted. Put the ingredients into the bowl with the sausage.  
  • Place the wok (again, no need to wash it) over a high flame and heat until very hot. Pour in about 15ml (1 tbsp) of oil and heat until it is just starting to smoke. Add the okra, sprinkle with salt and stir-fry for a minute or two, or until the pieces start to brown slightly. Immediately mix in the Chinese sausage and shallot/garlic/chill­ies and stir-fry for about 30 seconds. Transfer the ingredients to a dish and serve with steamed rice.
