CHINESE LONG BEANS - JAMIE GELLER
These beans live up to their name, but regular green beans will work too. Stir fried and tossed with a spicy ginger sauce, they make a great veggie side for Asian stir fries.

Steps:
- 1. Whisk soy sauce and cornstarch together and set aside. 2. Heat a wok or large sauté pan over very high heat. Add oil and long beans. Stir fry beans, for 5 minutes, constantly moving them in the wok until they are wrinkled and a bit charred. 3. Add soy sauce mixture, garlic, ginger, and sriracha. Stir to coat. Transfer beans to a platter and keep warm in a low oven or on a hot plate. Serve as a side to Ginger Garlic Beef Noodles and Quick Shiitake Lo Mein.

- Heat the oil in a large skillet. Add the onion and cook over moderately high heat, until lightly browned. Add the long beans and red pepper and stir-fry until the beans are slightly softened and browned in spots, 5 minutes. Stir in the sugar. Add the water, cover and cook over moderately low heat until it has evaporated and the beans are tender, 5 minutes. Add the soy sauce and pepper and cook for 1 minute. Transfer to a platter and serve.

- Wash the green beans and drain thoroughly. Trim the ends and cut on the diagonal into pieces approximately 2 inches long. Combine the sauce ingredients and set aside. Heat the wok on medium heat and add 2 tablespoons oil, drizzling the oil down the sides of the wok. When the oil is hot, add the beans. Stir-fry for 7 - 10 minutes, until their skins pucker and turn brown and the green beans are tender without being mushy. Remove the beans from the wok. Heat 1 tablespoon oil in the wok on medium-high heat. When the oil is hot, add the chopped garlic, ginger and scallions. Stir-fry briefly for a few seconds until aromatic. Add the chili paste. Add the sauce and the green beans. Toss the ingredients together and serve hot.
