Children love to eat shrimps and always try a variety of different methods. Braised prawns in oil are more flavourful and more like to eat. Deep-fried prawns are similar to braised prawns, but they are not the same. The sweet and sour mouth is still a child's favorite.

250 grams shrimp
10gram Flour
10gram starch
Right amount Green onion ginger
4 petals garlic
1/2 tablespoon sesame oil
2 tbsp Shimizu
1 tbsp Cooking wine
1 tbsp Soy sauce
2 tbsp Sugar
2.5 tbsp Vinegar
Right amount salt

Steps:

  • Choose larger shrimp and fry them to remove the prawn guns, whiskers and feet. Pick out the shrimp thread and cut into two pieces.
  • Mix the shrimp segments with starch and flour, add sesame oil, water, and mix well. In addition, make a sauce: green onion and ginger, garlic slices, salt, 1 tablespoon of cooking wine, 1 tablespoon of light soy sauce, 2.5 tablespoons of vinegar, 2 tablespoons of sugar.
  • The prawn sections are deep-fried until crispy on the outside and tender on the inside. Remove the strainer oil.
  • Leave the bottom oil in the pan, pour the fried prawn segments on high heat, while the pan is hot, cook in the adjusted juice. Stir fry a few times over high heat and get out of the pot.

This was my mother's favorite way to use up leftover white rice. It really doesn't taste like the fried rice you get at a restaurant, but it still a great meal. I typically throw in whatever vegetables I have in my kitchen, and leave out the shrimp or chicken. I also cut this down to accommodate the amount of rice I have. Cooking time does not include making rice, chicken or shrimp since this is usually made out of leftovers.

3 cups cooked rice, cold
3 tablespoons oil
3/4 cup scallion, sliced
3/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups diced cooked shrimp (optional) or 1 1/2 cups diced cooked chicken (optional)
1 egg, beaten
3 tablespoons parsley, minced
1 tablespoon soy sauce

Steps:

  • Make rice in advance and refrigerate.
  • Heat the oil in a skillet. Stir in the rice until lightly browned, pressing out any lumps.
  • Mix in the scallions, salt, pepper and shrimp or chicken. Saute for 1 minute.
  • Make a well in the center of the rice and pour the egg into it, stirring until barely set.
  • Stir egg into the rice mixture.
  • Add the parsley and soy sauce and stir. Cook 1 more minute and serve immediately.
  • For Vegetarian omit both the chicken and the shrimp.
