1/2 lb egg noodles
1 lb lean beef
1 clove garlic, crushed
1 teaspoon salt
1/2 teaspoon ginger, grated
1/4 teaspoon five-spice powder
2 1/2 tablespoons oil
1/2 cup soy sauce
1/2 cup duck broth or 1/2 cup chicken broth
2 teaspoons cornstarch
4 teaspoons water
6 green onions, sliced

Steps:

  • Cook the noodles in salted boiling water just until tender; drain, and rinse under cold water.
  • Cut the beef into very thin slices.
  • Mix together the garlic, salt, ginger, and five-spice powder, and add the mixture to the beef; mix.
  • Heat the oil and saute the beef over high heat for 2 minutes.
  • Mix together the soy sauce and broth, and add it to the beef; bring to a boil.
  • Mix the cornstarch with the remaining 4 tsp water, stir into the beef and cook until smooth and thick.
  • Add noodles, mix well and heat thoroughly.
  • Add the green onions, and stir for another minute.
  • Serve immediately.

clear honey
light soy sauce
hoisin and garlic stir-fry sauce
Zest of 1 lime, plus 1 tbsp lime juice
vegetable oil
extra-lean beef stir fry, or sirloin steak, cut into thin strips
bunch of spring onions, washed and sliced lengthways into thin strips
red chilli, deseeded and finely sliced
unsalted cashew nuts
yellow pepper, deseeded and chopped
ready-cooked rice noodles

Steps:

  • CHILDREN: Put the honey, soy sauce, hoisin and garlic sauce, lime zest and juice into a large bowl and mix together. Set aside.

    Heat half the oil in a large pan or wok. Add the beef and stir-fry for 2-3 minutes until browned. Remove from the pan and transfer to the bowl with the sauce. Discard any juices left in the pan and wipe it clean with kitchen towel.

    Heat the remaining oil in the same pan, then add half the spring onion and the chilli. Stir-fry for 1 minute, then add the cashew nuts and peppers and cook for a further 3 minutes.

    Meanwhile, cook the noodles according to the instructions on the packet. Tip the beef and sauce into the pan with the pepper mixture and heat gently for 1 minute. Serve with the rice noodles and garnish with the remaining spring onion.
